    I’m black and I can’t tell you how many times I ate this exact salad when I still lived down south coming up. We usually ate this salad on Fridays with fried fish & grits.

      You and me both, always look forward to the summertime and fresh vegetables for sure, went last Wed. to our Farmer's market but they didn't have much to choose from yet, got some yellow squash and butterbeans, will try again in a couple of weeks. I like the smothered okra and fresh tomatoes with some onion also, Yum, Yum nothing like our fresh summer vegetables!

    Thank you!! I really enjoy taking a break from work with you every day or so. I watch you while I eat my lunch. This salad is one of my favorites from childhood! I am like Aunt Peggy- I make it with more oil also and just a pinch of sugar! But I salt the sliced cucumbers and leave them in the frig for a while until they weep. Then I drain and rinse them and don’t use any salt in the dressing- only black pepper. I didn’t hear until I was grown that it’s supposed to prevent “gas on the stomach” as my grandmomma used to put it.
    When I smell cucumbers or watermelon I am a freckle-faced barefoot kid in summer at my grandparents’ farm. Even though our farm was also a Santa Gertrudis cattle ranch, summer Suppers were often vegan 🌱 and all from the
    Garden. My favorite summer supper was corn on the cob, big thick slices of ripe tomato with salt & pepper, butter beans and cucumber salad. Sometimes the cucumber/onion salad is made creamy with yogurt or sour cream. Watermelon or cantaloupe (we raised melons commercially) with salt and pepper and crisp bacon was summer breakfast. We had sandwiches or roast for lunch and then we had to shell purple hulls or some other peas during the heat of the day while grandmomma and I watched Nancy on As the World Turns (She called it As the Dinner Burns) and General Hospital. As soon as afternoon curfew lifted- I flew out the door to roam the farm with the dogs. All these happy thoughts just from your little bowl of salad! Thank you, Paula, from a Texas girl.

    Love this salad! Don’t see your link to the dressing recipe, though. I have made this salad for years, but have never used garlic in the dressing. Look forward to your videos every morning!! Super fun and such good food!!

    Hey Paula,
    Its no joke having back problems, heat pads and ice packs with anti inflammatory jell or even pills it's about all that helps. Hope aunt Peggy gets to join you soon in your kitchen we would all love to see her up and about free from pain. Elephant garlic is my favourite especially when you add a wee bit of salt and olive oil to the big cloves wrap it in a small piece of tin foil and roast it along with different vegies, makes it sweet and really delicious.     I love it call "Elephant Garlic", I am a garlic girl, eat raw, toasted, grilled haha. I called a big green onion, "King Green Onion". I love it so much. This is looks so great. I love you Paula!!! I would love to go your kitchen... I will bring King green onion!

    I made this last week with barbecue country-style backbones, navy beans and cornbread. I put about 1/4 cup of sugar in mine, though.

    I hate what that Food Network did to you. But thank God that you made your fortune first. I supported you 100%. And look at what they did to Emeril Lagesse, they used him and dropped him. Unfortunately most big corporations are like that. I remember in like ‘08 you were doing a live show and me and my husband got tickets, it was in Manhattan and we were late to the door by 5 or so minutes and they wouldn’t let us in because they were taping like with guests sitting around tables I forgot the name. Glad to see you have a UA-cam!!

    Now I need elephant garlic.
    Also. I save paper towels when I only dry my clean hands in a little basket in the kitchen and use them again for cleaning up dirty things like floor spills and puppy accidents.

    I’m ‘frugal’ too! If you’ve been raised to save every scrap, it just sticks with you no matter how much you have in the pantry. So I wash those nice disposable cups, I’ve even been known to throw the heavy duty disposable spoons and forks in the sink with them! lol

    Classic recipe!!!! My Italian grandparents made it and so did my Georgia southern grandmother. They both added a spoon of sour cream to make it creamy on special occasions.

    Looks delicious. I always add celery and bell pepper chunks. Those additional items still make it just as good after few days in refrigerator which will happen if only preparing for one or two. Not that it isn’t delicious and will be eaten fast if enough people. Just that these cucumbers in stores are bigger than needed for one or two servings! Safe salad to enjoy and avoid all the contaminated lettuce problems.

      I used to hate salads because I didn't like my mother's salad dressing, which she added to the whole salad. When I became an adult, and learned about different types of dressings, I became a salad lover.

      Paper Moon Bless you 🌷🙏I was doing chemo 11 years ago. I know how your energy decreases , but once you're finished with chemo, you hair starts growing again and your energy gradually comes back. Take it easy and know we'll keep you in our prayers! You'll be fine 😇🙏🌷

    Tell ya what Miss Paula. If you add a heaped pile of grated Feta Cheese on top, and then garnish with black olives you will have a MACEDONIAN SHOPSKA SALATA.
    Or....
    Add chopped grilled peppers and olives, and you have a MACEDONIAN SALAD. Go more heavy on the parsley too.
    Or...add cubed feta cheese and cubes of watermelon. Omit the parsley but add ripped fresh mint and basil leave. Summer salad to swoon over!

      As far as parts, it can be any basic measurement. It looked like a part in this recipe was about 1/4 cup. So, two parts of oil would be two 1/4 cups. And then she said one part olive oil, one 1/4 cup. If she was making a big batch, then the part would be a cup let's say. So then it would be two cups (parts) oil to one cup (part) vinegar. Hope this makes sense!
