The developers thinking that In Water ending is canon is just another opinion. It should not have any baring on what you or other people should think.

GOD they fuckin' nailed the voice acting this time around. I was so worried that this would just be another memberberry remake, but it's the real deal.
The VA in this remake is stellar but special shout outs to Angela's and Eddie's. Unreal talent. I think people just got used to the original game's voice acting which, no sleight to the OG VAs but, SH2 VA wasn't exactly.... good. I hold no particular bias to either, but the best compliment I can give to the original's voice acting is, it's "charming."
SO relieved to see that they kept the staging of the shot-reverse-shot around 43:07. The fact that they're both on the right of the shot and looking left makes it feel so uneasy and they could've easily done it "correctly" and not understood why it was intentionally made that way.
James always looked like Leon. Their design wasn't inspired by each other. Just a funny coincidence between two horror-genre giants. Medium-length-part was very popular during that era, and it was was a common choice for designing boy-next-door type characters.
I think they did a great job on this, personally (watched gameplay and I’m now rewatching the cutscenes here), but … I gotta say I am a little diappointed by the “I’m not your Mary” line delivery. It was my absolute favorite moment in the original, down to how the light casts her eyes in shadow, and it’s terrifying in a sleeper hit kinda way. Didn’t have as much impact to me here. Still, good job overall imo. Pleasant surprise!

And is it just me, or did they clearly make Angela’s appearance seem substantially younger?

During the Brookhaven hospital part, the nurses use a pipe as a weapon before you get into the hospital. james picked up a metal pipe I dont think it was a coincidence that this happened.
This remake is the epitome of losing artistic qualities through technical improvement. The VA is "better"(Not even, Mary's letter read is not nearly as dynamic and depressing as the original) but now it doesn't have that ethereal dreamlike weirdness. The faces are more detailed but they all look worse in various ways aside from James. A lot of deliberate camera angles are different and don't carry the same thematic implications like when James is on the couch in the hotel. The combat is technically more fluid and responsive but it's hard to feel tense fighting two Pyramid Heads when James can chain side-step and circle strafe like he's from Bloodborne, the rewritten dialogue from that scene is also not as impactful as "I was weak. That's why I needed you.". I don't hate this remake I'm just confused as to why it needs to exist at all when the original is still perfectly fine.
Pretty sad seeing the Silent Hill IP getting nothing for years and finally getting some content, only for people to argue with the creative directors who've also worked on the original because the fking shadows on Jame's face is not dark enough, as if the crappy and shortcomings of the original in gameplay and graphics are artistic choices and not a limitation of hardware capabilities at that time. I really hope they stop making any Silent Hill content cause they'd never satisfy anyone at this point.

Wow, it's cool they sticked to the OG game and didn't change it up much. They pretty much just updated the dialogue and changed some of the cutscenes to be a Lil more straight forward.
