Thanks for the tongue recipe. Great idea to use it in tacos! I could make chicken and egg based tortillas to go with snd I would add spices and a little tomato paste or sauce, onion snd garlic. Carnivore-ish.

Hmm I honestly don't know the answer to that question. I don't get it that often so that's never really come up for me. It is technically an organ meat, and there is only one per cow, so based on design and thinking nose to tail, maybe it isn't a daily staple. 🤔 But that's just my speculation.
I have an old school pressure cooker too ☺️ With the weight spinning around at the top. Use it to cook oxtail, curry goat. That tongue looks like something from an Alien movie 😱
It does need the knob to work, that hole in the top needs to be blocked initially to build up steam so pressure cooking happens. Wondering whether you might buy just the knob as a replacement part from a manufacturer.
Thanks for the tips. It’s been a while since I’ve been in Whole Foods. I did not realize they had chicken feet (which I love). I usually get them at my local international grocery story (which is not organic but they’re still delicious). Nothing like a good broth with chicken feet!
I can describe the texture better than the taste.. It is super tender, almost melts in your mouth! The taste is slightly different then regular beef cuts, but still mellow.
I am sure this is not carnivore but my grandma use to pickle the tongue. In case anyone who seen this may not be doing carnivore and wants another idea. 🤷🏻♀️

Beef tongue is so delicious.... my mom cooks it with water, bay leaf, salt, pepper corns
A french version, is Cow tongue salt and a little cider vinegar, boosts the flavour a little....

Yum! I love cow tongue too. I leave it whole. Put it into the slow cooker with some salt for 6 hours and it becomes tender and delish!

I either order mine from Us Wellness meats or I find them at my local grocery store. If your store doesn't have then, try a Mexican Meat market.
