- Hey friends, this past week old man winter settled in on us good with some bitter cold temperatures. But it was the perfect time to get cozy and cook up some winter comfort food. I cooked plenty of warm and satisfying meals but I made a lot of fun and easy little treats to keep everybody happy, too. I’m 60 years old and my sister just taught me if you take your can opener (the little hook part that we used to use for pop bottles) take that and put it under the lid to pop the seal…. Lol😂

No snow but the cold weather. I am going to making chili beans for supper tomorrow night. As for the grocery stores and snowy weather, we do the same thing at the mention of a little flurry here in North Carolina.
We're in North Alabama and we were iced in for 4+ days! I was able to get a grocery run in before it fell, but by Day 6-7 the bead, milk, and eggs were nearly gone. Glad I try to keep several frozen casseroles and veggies on hand!

I LOVE the Chi Chi's Sweet Corn Cake!!! That was one of my favorite things to get when we used to go to Chi Chi's. I didn't think they made them anymore.
It was delicious, I added a little shredded cheddar to it. It tasted a lot like the Jiffy corn casserole, I wish I could remember where I picked it up at.

In the last two weeks, I have made large pot of chili, pot of vegetables soup, and lasagna soup. Eat out of each two nights, then put rest in freezer. So I have 3 meals in freezer for next time I want soup.

You always have the most delicious food. We didn't get any snow in Eastern NC, but it was really cold, until Friday and it was 80 degrees, I loved Friday😀, my old bones can not stand cold.

Hey Mel! I have the same little battery operated lantern in my kitchen! I usually change it seasonally with a little wreath of flowers on top. Right now it has a snowberry wreath. I love that thing! That chicken dinner is WW friendly! I'll have to make it!

I got mine at a Metropolitan Market in the kitchen area. It takes 3-4 C-cell batteries. They last a long time. Mine comes on automatically when it gets dark in the kitchen. It's lovely to use when you have company and have a buffet spread out on your counter tops. @@connieyoung7025

Hey Mel, the Chicken Monterey looks like one we have here in a diner restaurant, but they saute Onions, Peppers & Mushrooms on top - its my favorite too. I was just thinking I need a Tuna Patty Recipe bc I love Trader Joes low salt Tuna so much. Ur dip looks absolutely scrumptious too. This was an excellent episode bc its just me eating mostly & I love smaller size recipes!
Btw, what is "snow cream?" I never heard that expression, is it kinda a snow angel where u lay on the snow, move ur arms up & down to make angel wings?

They said they weren't part of his accident, which they are and are responsible for them till he dies. We're both dealing with sinus crud at the moment. I have a sinus infection. Yes, we do. It's a cake with alot of thin layers, like about 10 layers and it has apples filling between every layer. So delicious 😋 I think it's kinda an old timey thing, and it takes a lot of time so I will stick to the Graham crackers 🤣 Let them get really soft in the fridge and it tastes exactly like one.

Mama I seen a lady put bacon in a bag then put flour in it get all the bacon covered then lay it out on your cookie pan and bake it, they said it will lay flat and taste just as good as frying it they did turn it after baking for 10 min have you ever tried it this way?

Well...we were in single digits with below zero wind chills. 🥶 bitter cold to us, I'd never make it thru a winter up north 🤣

Why would you take out the bones and skin from salmon?
It's just a "me" thing - you don't have to but for me I just don't want them in my salmon patties.
Canned salmon...break those bones and skin up....or u r minus the calcium!
