- I often have family and sometimes friends over at our house spending the night. And this casserole is wonderful to serve in the morning for breakfast. You can prepare the ingredients and cook the bacon and sausage ahead of time to save time. This way a lot is already done to finish up making and then cooking in the morning. You can spend more time with guests instead of being in the kitchen. A delicious and hearty casserole to serve a crowd.

I used to teach a cooking class in my home for students from a Christian school who didn't offer a home economics course. And I wouldn't take a penny from their families. I loved them because I didn't have to be "perfect" around them...they loved me just the way I was. It was so rewarding and satisfying! Keep doing what you're doing and I look forward to many more of your recipes! I love everything about you! Just hope to one day to get the opportunity and pleasure to meet you!

This I will definitely try! I've tried one or two casseroles from other UA-camr's and haven't been disappointed - but your's looks absolutely delicious. Love your videos and your wonderful authenticness (is there such a word?? Ha a Ha). But you are really fantastic. Loved watching your Little People Big World series from years ago and watched your kids grow up and now this show! Really, really fantastic. One tip, and I'm sure you know this, but when I cook bacon and need small pieces, I cut the bacon before putting it in the pan to cook - then there is no problem with having to cut the bacon - and I'm sure you know this. Thanks, Amy for all your hard work and you are so much fun!!! 🤩🤩🤩🤩

Hey Amy it's so much easier if you cut the raw bacon and then fry it. So much easier for casseroles even ceaser salad. Blessings
I partially freeze my bacon then slicing is so much easier, then frying up the smaller pieces is better than trying to cut up cooled cooked bacon

Hey Amy, I was watching you make your tex mex chicken casserole. Just thought I would tell you that you can put your cooked chicken in your kitchen aid mixer with the mixing utensil attachment and turn it on low or a little higher, and it will shred your chicken. Of course your chicken needs to be poached well like yours was when you shredded it by hand. I hope you try it. It is a time saver my daughter taught me. 👍😊

I do have one complaint though and I’m sorry it’s probably not gonna be a popular complaint why are you still using the last name Roloff? I would just use Amy and find some other tide to go with it it’s time to wash your hands of the rolloff name. Remember America loves Amy for who you are, the mother that you are, and the fact that you’re just a good person. A faster way to cook that bacon (that you are going to crumble) is to cut in small pieces before frying. Going to make this the morning after thanksgiving. I’ll have guests and believe they’ll enjoy.

Hi Amy! Love your videos. Wondering, why you don't have adjustable counter tops which include stove tops, sinks, islands - to be installed? They make them all the time for our veterans, they lower for your custom height and raise to regular standard height with a simple push of a button whether the just tbe stoves, sinks, or the entire counters, islands too. Made out of granite, marble- too and any style sinks, stove tops, dish washers, microwaves - as well. As women age - our joints, bones, legs, hips, spine and balance take a lot of abuse, strain, pressure on these including muscles, tendons, bones, - I sure wish you and Chris would get them for you. Step stools are an accident waiting to happen in a kitchen. They are beautiful and very accommodating, and look amazing. Please consider installing them. Since they'd be considered medical related equipment and update renovations, the costs fir those medical upgradea might be tax deductible. Best wishes!
She did have a fully adjusted kitchen at the farm house, I removed the episodes when it was installed. Maybe she's just used to this kitchen now and Chris can use it too?
She had some changes made to her kitchen after she bought the house with a shorter island but not as short as what she had at the farm house. Amy said she's been climbing up and down those step stools her whole life and she's used to it. Eventually when they retire and buy their forever dream home with a one story layout and a few acres for grandkids to play she said she will probably do lower counters then. But this house is just temporary until they reach retirement age.
