Love your recipes, Flo! Since the duck is already roasted, I think I'll cut it up, pressure cook it to get the meat off the bones, and save the carcass and some of the stock to make duck jook! Then I'll pressure the curry sauce as you have done along with half the meat, and add veggies (Thai basil, eggplant, tomatoes, etc.) afterwards
I made this yesterday and today using Asian pear yesterday and apples today. (Fruits from my yard.) I'm glad to say both turned out amazing! I'm going to try this recipe with Costco's roast chicken.
I'll join in on the Wow wagon. Hmmm... The drunken noodles are my favourite. No duck lovers in the house, so I used the roasted chicken $4 each and minus the fish sauce. I added the Lychee to Comquats 3/1. Yep, San Fran does have a great Foodie scene. Thanks Flo and Dude Lum.
chicken stock: instant pot, chicken legs, parsley, dill, salt, pepercorns, onion, carrot, water to 10 cup line... 30 minutes.. release, strain, cool... pour in 8oz containers.. freeze.... broth all the time!

I say do what you want. ;) I like the bits of tomato but you can surely blend them in if you prefer. I won't tell any Thai people.

Flo Lum Duck is fine as long as U don't have to prepare it. I'll drive to the Asian Market in Raleigh for it. But I will be the only one eating it. ,)

Use cherry tomatoes instead, and They’re not supposed to be cooked out and mushy like that.
