Any tricks for harvesting? Right now, the birds do it for me but I'd actually like to try eating some myself some year.

You can try Bob Gordon elderberry if you're having bird issues. The berries tend to hang low and behind the leaves. Otherwise you'll have to use scare tape or a net.

What about Goldbeere elderberry? I bought two of them from you guys. Any advice about them? How tall do they get?

Goldbeere is also a Sambucus nigra despite the different color of the berry and the same information applies. They get about 8 foot, which is decent size for the genus.
