The soya curds are then processed into tofu in the desired form, primarily in custard-like blocks. A variety of textures may be produced, depending on the water content.

To the best that I know about the 1st disk which is a Cantonese disk "咸魚雞粒豆腐煲"; (1) You need to use coarse salt instead of fine salt. (2) Use no oyster sauce

The second dish is similar to Indonesian "batagor" (acronym of "bakso tahu goreng; literally meaning meatballs with fried tofu); fried tofu stuffed with meat, with the difference being the Indonesian batagor using a fish-based stuffing instead of pork and shrimp

That is because the Chinese Immigrants brought the recipes to Indonesia. Batagor, baso tahu, siomay they are just variants of this. Actually lots of traditional Indonesian foods are from old Chinese recipes.

i think if you wanted to air dry that fish safely without bugs and flies getting on it making it go bad is to get a fruit dryer that way its protected from the outside and it dries faster too

well chef , that salted fish is magic , i eat it only with salted fish, calamansi juice , sugar , bird eye pepper , mix it well eat with hot rice

Many Chinese recipes use tofu as just another ingredient. It is used to complement and extend meat dishes. It adds textural contrast and flavour. Only in temple cooking would you find it as a pure vegetarian dish. If you’re looking to substitute out meat you would use Gluten/Seitan
