Pasta/noodles have plenty of protein as is so it wouldn't be lacking in protein. Contrary to a popular myth all plant protien sources contain all the essential amino acids. Wheat pasta is typically around 14-18% protien (by calorie) while a healthy amount of protien (minimum) is only about 5-10%. Or 0.66g per kg of healthy body weight on average (0.8g/kg is the rda to air on the safe side)
The vast majority of whole foods plant based or not are at least adequate sources of protein. So it's not something anyone needs to worry about. But there are many foods processed to remove the protein such as oil (including both animal fat such as butter or lard), sugar, and food starch which make up the majority of some processed foods like potato chips and mayonnaise.

Hi Miwa-San… my favourite was the nori dressing. It’s so versatile. I love that you can use it on cold noodles which would be perfect in the summer heat. When it’s so hot and I come home from work, often I will make somen with buckwheat noodles. I sprinkle with green onions and add a little bit of wasabi paste in my bowl and mix it into the dipping sauce for a kick. Then cut some nori to sprinkle on top of the somen noodles. It’s so quick and delicious. The nori dressing would be so good on top of hot cooked rice too. I also like the tofu dressing too. I’m going to try it this week. Thank you!! Kio tsukete 😊🇨🇦
Miwa-san! I made the caramelized onion dressing to have with... well, I'm not sure yet. I was so excited about the recipe that I made it before I thought out the rest of the meal. But it's so yummy!!! I've just made your tofu tahini dressing (maybe from another video?) too and it's also extremely good! I'm not used to putting something in my mouth and being surprised by how interesting the taste is, but all of your recipes have been like that. Thank you so much for the instructions!
I love your ideas! I also live in a hot climate, summer high temperatures start in June and don't end until October. Cooking is so difficult, I also literally do not turn on the oven at all during these months, it's just unbearable. Thank you once again for inspiration.

I'm going to try your yuzu dressing idea this week, and use it to make poke. I don't think I can get pre-made yuzu koshou here, but I can make a version if it with fresh citrus I think. Have you ever made poke? I haven't, but I tried it last week and really enjoyed it!

Oh, I can't wait to try these recipes! Miwa, I have a question- shopping for Rice Vinegar I discovered some are seasoned and some are not. Some even just said, lightly seasoned. Which one do you use in your recipes? What is the one used in Japanese cooking in general?
Mine is nothing added . just 100% rice vinegar. Sushi vinegar is seasoned with salt and sugar ( sometimes + dashi). so it's a bit confusing! Good luck Diane!! Keep me posted if you make one^^

When you were making the nori dressing, I was thinking it would taste great on soba noodles right before you said you could also use soba. 😊 Caramelized is a hard word to say and many people whose first language is English can't say it. 😀 Your pronunciation was great! In some parts of the U.S. we say car-malized rather than care-malized.

I know how hot it is in Tokyo in summer and still I love it :) and miss it, but you get creative with cooking hahaha Nori is so versatile! It use it with shiro dashi kara age as part of the batter. In the nori dressing noodels I would add mitsuba since I have so much in my pot in the garden. And the miso mayo would be great as a vegan sandwich spread with avocado :) I wonder with any of these dressing if we can make a good hiyashi chuka noodles. What do you think? and you can make edamame fritters which will go great with any of the tofu mayo based dressings.
I would say if you add a bit more vinegar to the onion dressing, it will be a good addition to Hiyashichuuka! wooooo I will try that!! Edamame fritters!! I've never tried that but I would love to!! I'm just too lazy to do deep fry in my kitchen. haha

onion dressing with shrimp sounds nice!! You can use traditional mayo but store-bought one might be more savory and salty, so please adjust the taste with adding less miso and the rest!
Personally, I don't like using olive oil in many cases, because I find no matter how it was refined, I can still taste olives. In dishes where the oil flavor comes forward, I prefer using sunflower oil. I also use peanut oil (it tastes nutty and i find often amplifies the flavor of sesame and other nuts) and Canola oil (which I think has no flavor)
English pronunciation sometimes has tricks! I have a bit of an odd dialect, but you could pronounce "caramelize" as カラモワイズ: sometimes "w" can be used in place of R or L. It's not "correct" but in everyday, faster speaking, it can go unnoticed. Even native English speakers can find repeating sounds tedious, and when I was young I had difficulty with R and L.
