im obsessed with making baked salad lately 😅 i roast shredded lacinato kale and cabbage then top it with pickled red onions, nuts, and a red wine vinegar-based dressing... it's so so good!!

Welcome to the PNW! As a Colorado transplant I also love all the green but sometimes I feel a little claustrophobic with all the trees. I miss the wide open plains at times. That view looking south at the front range from DIA is something of a nostalgia for me now. Thanks for all the recipes. It's a bit overwhelming trying to keep a healthy vegan diet at the beginning. It's been a challenge for the past two years.

Thanks for the video. With the pie crust--- if you need a recipe my family has always used vegetable shortening (Crisco). It's not as flaky as butter, but I haven't really minded it because of how much moisture retains in the crust. More of a fudge brownie texture than a flaky crust.
I saw your Short on the broccoli cheddar soup and it looked way better than another version I was planning on making; I go to the store tomorrow and I'm so looking forward to making it! I like that it doesn't rely on adding any vegan cheese. Who doesn't love potato soup, and this looks like a perfect combo of them. That alfredo also looks incredible!
we buy TVP mince in 22 lb bags and make our own sausages, ground round, beef chunks and chicken nuggets for a fraction of the price of what you pay in the store. we also make our own milks with a milk making machine. then the okara makes amazing cakes, muffins and even lunch meat. there's so much you can make yourself that's so much better than store bought.
Hey! lovely recipes and lovely people. What nice vibes you guys have! Since you are retesting the beef stew... I think a cornstarch slurry is the wrong thickener for the stew ( wrong texture, too glossy, perfect for chinese food but not a stew) . You have a few better options, in my humble opinion ;). One would be to add a little flour at the very beginning , when you sauteed the onions and the meat and cook it for a couple of minutes before adding your liquid. You could also make a beurre manié which is what is the most traditional method for a "beef bouguignon" (that seems to be the inspiration here?) and my third suggestion, and the easiest is to use Wondra flour. It's just super finely milled flour so it won't clump. Basically same as a slurry witout the glossiness. You'll find that with the flour in any supermarket. Happy Holidays! Keep cooking those wonderful recipes. And yay! for K drama! Did you watch Extraordinary Attorney Woo, really good. Korean version of Atypical, sorta.
I love realistic / intuitive recipes because sometimes ( especially being disabled ) we are too lazy to handle a knife and cut some veggies and just want buttered noodles
Pumpkin Pie! I'm so glad it turned out. I've been missing pumpkin pie; I had a similar disappointing experience w/ a starch set pie years ago and hadn't ever tried again. But it used to be a favorite... I used to love it w/ coffee for breakfast the day after a holiday LOL. I'm going to try w/ the Just Egg, as soon as I find some condensed coconut milk.

In the UK there’s an app called Too Good To Go, where restaurants and stores sell “magic bags”, you basically get a random selection of food that is close to expiring or will just be thrown away that day, but at a discounted price. So you could get like £20 worth of food for around £4. Not sure if you have something similar in the US.

I love Business Proposal! So far it's been one of my favourite KDramas. Btw, love the vampy nail polish (I own a lot of indie nail polish (they're also like always vegan and cruelty free)) and it makes it feel somehow relatable, because I wear a lot of vampy dark purple nail polish (as well as a lot of orange and blue, but that's beside the point). I thought this was such a nice diverse mix of foods!

If you like Lomi, maybe you would also Like Bokashi. I really, really love it. People are afraid of it smelling bad, but it doesn't. Its not rotting, it is fermenting and a great nutrition boost for your soil :) But! More important! Don't know if you can get them where you are, but I make my boeuf bourgignon with gardein beef chunks. I think the beyond is to shreddy and chewy, and soy curls are also a bit chewy and thin. I just make sure to share them until they are well done before putting the liquid in.
I might suggest just a bit of mushroom dark soy sauce for things like the stew. Makes just awesome color and a bit of umami. Everything sounds so good 👍
Ugh, everything is soo expensive 😭 I was looking forward to vegan substitutes going down in price as they got more popular, but some have doubled in price instead. It really sucks how most things are 50-200% more expensive now, not just food. I've gotten so upset whenever I've recently had to replace things and they are twice(or more) the price I originally bought them for only a few years back.

Glad you are enjoying the PNW. Yes, Colorado does get very bleak in the winter. I have been in the PNW a lot myself lately for work. I am in Oregon right now and it is so beautiful. It was a very stark contrast when I went back to Colorado over Thanksgiving. But this last summer we had lots of rain in CO and it was beautiful out in the woods!
That beef stew looks perfect. How was the steak texture after being cooked in liquid? I’ve wanted to stew with it myself but haven’t yet. I know the texture is pretty soft.

When I make my 'beef' stew I use Gardein's Beefless Tips although they are getting hard to find in my area. 100% agree about the rampant, indefensible waste of food.
Something called a "Foley Food Mill" might be a better option, compared to the "potato ricer" shown in the video. It can also be used to make applesauce, for example. Anyway: keep up the good work.
I like the country crock plant sticks but I freeze them and grate them into the flour like cheese. I've also been OBSESSED with making a simple Alfredo out of cashews with lots of coarsely ground black pepper. Yummmmm. I sometimes blend jalapenos into the sauce tho bc we love spicy things in my house.
That pie and kale cabbage salad both look great! I'm looking forward to trying the pie recipe when you publish it. I've never used those new vegan condensed milks before (is that what you used?). Making your broccoli soup tonight!!
Love watching your videos, and business proposal is one of my favorite kdramas. My moms favorite, so I started watching so we could talk about them together lol.
Although a longer video, it was jam packed with so many amazing recipes, and as always, a well put together video. 👍 When I do Alfredo sauce I use onions too, but sauté them down with garlic and butter, then add them to the blender with the cashews. That creamy potato/broccoli soup looked amazing too! (Well, everything looked amazing, but…being soup season… 😊). I love that you guys cook together - something I envy as my hubby isn’t vegan nor does he cook! 🤪
Did you find that the pie crust came out sort of like shortbread instead of pie crust? Because I also made a pie crust with country crock olive oil buttery sticks and it had a short texture. Weird. Never happened to me before. I do enjoy those buttery sticks generally.
Grocery Outlet is great for discounted vegan products but want to note not everything is discounted so watch the prices as other grocery stores can have better prices.

Gardein beefless tips are my personal favs for stews! definitely have to marinate them though because they don't have a lot of flavor on their own
