I'm a sourdough baker but don't even touch the stuff myself since going carnivore. Not convinced it's that healthy. before the dough gets baked it's loaded with probiotic-promoting yeasts & bacteria but they all get killed off for sure after being in a 230 degree celsius for 50 minutes. The gluten is definitely easier to digest from the lengthy sourdough fermentation but at the end of the day it's still heavy in carbs and still spikes your blood sugar. And there's fiber which is not actually beneficial for the gut and potentially problematic, according to all the carnivore doctors
It’s not a that big a deal. Just eat it if it doesn’t have a bunch of shit in it. Carnivore is unsustainable. No body sticks to it. Carnivores operate in streaks because they know the diet sucks. “15 days carnivore!” Right before they fall off the wagon for the 46th time
One of the most interesting historical stories about milk is with the Mongols. They documented how the milk from there war horses kept there traveling warriors strong whereas the Agricultural Chinese rationed off of rice during the war. Kept them weak and frail, interesting story.
My favourite example is looking at North American Indians vs their South American counterparts. North Americans were very tall and strong, while the people of the jungles were much shorter and even quite overweight due to their high carb intake and lack of protein. Someone who eats meat will automatically be stronger than someone who eats plants, it’s given.
And interestingly enough, it wasn't raw milk but instead special fermented milk drink that some of the nomadic farmers in Mongolia still make- it is described as something between milk and beer, slightly alcoholic and very good for your health. I watched an episode on TV recently talking about Mongolia and its history/traditions.
Drink raw milk/cream daily No eczema, acne (actually I had acne until we got our own cows and started consuming raw milk) No weight gain. We experience really good health with it in Our diets :)
My family doesn't have cows, but mom buys raw milk from a local farmer- around 6 liters twice a week. We make it into yogurt and cook with it, we even collect the fat on top and use it as butter. It is great- we get raw milk directly from cows and support a local business. It would have been better if we could get our hands on goat milk, but no goat farms nearby, it is also expensive to get it delivered from far away
When I was vegan I thought dairy was the Antichrist basically 😂😂😂 now I eat allll the raw cheese, kefir, a2 milk, cottage cheese, sour cream, yogurt 😋😋😋

Hey Paul, I have a quick question for you. I’m 28, in decent shape, and have been training in the gym on and off since I was 16. I’ve been following your way of eating for about 2 months religiously. I’ve lost 23 pounds, going from 238 to 215 (I’m 6’2”). My main question is about working out- the lack of starchy carbs has me EXTREMELY flat and affects my workouts. I’ve been eating a ton of fruit before hand to try and imitate the effects of some white rice, but it’s not the same. How do you feel about me adding a small serving of white rice strictly before workouts? Would it throw the entire way of eating out the window? Is there a different carb source your recommend? Many thanks, A future nurse.
Definitely try some white rice! Just cook it VERY well, and eat it with some saturated fat source. And be aware that if you cook then cool it then eat it, it will have more "resistant starch" content and may become more of a gut issue.
I find grains hard to digest after this way of eating. If you still feel lousy after eating fruit I’d bump up the electrolytes and then personally I’d add in sweet potatoes before I’d add in rice but I’m also active and have never felt the need to go beyond fruit and dairy.
@@nidhishshivashankar4885 I’m a valet right now while I finish up my BSN. So I literally run for 8 hours a day 4x a week. Then hit the gym. I eat so much fruit, I don’t think I could possibly add any more fructose lol. I still feel strong, it’s just my endurance.
@@10onpump5 with this much activity you need much more carbs!! White rice is easy to digest and has no antinutrients You can get organic and its even much better And mix it with butter or ghee or coconut oil
A good thing to carry in your bag if you work 9-5 in an office are beef sticks and also pork rinds for the crunch and fresh and organic fruits. Make sure they are organic and grass-fed, with as little sugar as possible. There are many good ones in the marketplace.
Pasteurised dairy is a strong causal factor in type 1 diabetes. If raw dairy is illegal where you live (e.g. Australia, Canada), you should avoid pasteurised dairy at all costs.
I think it depends... when I stopped consuming dairy completely, my mood swings and anxiety went away within 3 days! It has been 2,5 months and it hasn't come back since :) I don't feel sluggish anymore and feel more joy in my life 🙃 Still.... cows milk is primarily for baby cows, such as human milk is for human babies... that's what makes most sense to me anyways... (saying this as a dairy lover). 🙂

I've just come to the conclusion that dairy absolutely triggers my eczema. I was consuming raw cheese, butter and ghee and still dealing w eczema and acne here and there. I wonder if it's an indication that I'm still combating leaky gut. Maybe your gut healed, therefore giving you a better tolerance to it because you gave it up for so long before reintroducing it in your diet
Have you tried raw milk? I can't drink store bought pasteurized milk but I can drink raw whole milk without any issues or gut problems. It's amazing how much of a difference it makes
Great talk, Paul. I'm on a mission to find raw milk now. I also go through roughly a gallon of heavy whipping cream per week. Gotta find that raw as well!!!!!
Ray Peat drank a quart of milk and a quart if fresh oj daily. He was slim and mentally sharp as a tack at 86, when he passed away. He'd had health issues earlier in life so that life span was not only beyond the average by 10 years, it was well beyond what he'd initially been told he could expect. Now, that being said, he never recommended a specific diet it that anyone do what he did. But he drank a lot of milk daily. When we could source raw milk, I did a raw milk only diet for a few days, it was great. Expensive but great, lol. But a gallon might be more than you need, and it's always good to get nutrients from a few different sources as well.
@@madeleinegrayson8372 I think I worded it wrong. I didn't mean I would drink the entire gallon, I was just giving a example of a milk. Basically asking if regular gallon milks are fine for long term? Btw thank u for your input you gave tho
You need to pasteurize your raw milk when making yogurt. The natural bacteria in the raw milk actually competes with the lactobacillus bacteria from the yogurt culture. The end result is like a gooey, lumpy “yogurt” that doesn’t real lay have any characteristics of yogurt. Yogurt processing is around 118 degrees Fahrenheit, so it’s not too hot, but is hotter than room temp kefir fermentation. I make my own yogurt and kefir on a regular basis from A2 raw milk. When done, I mix the natural yogurt with raw honey and top with fruit. Regardless of it getting low temp pasteurized at 140 for 30 min, it’s still leaps and bounds healthier than branded, packaged yogurt
It's interesting, I tried to get my italian mother to drink a sip of some low- pasteurized A2 milk i bought her, and she had been so conditioned to view dairy as an additive and not to be consumed direct that she was repulsed and screamed at me to get it out of her face. Sadly, finding Raw milk near me is kinda impossible. The mIlk Cartel is hard at work in Canada. There are just come people who can't break their conditioning. :D. The first Time I had this low pasteurized A2 Milk, the cream was at the top and I nearly downed half a litre. It was so damn good. I now mix it with some raw eggs maple syrup and a bit of salt and some dried colostrum in the morning. Has done wonders for my appetite and energy through the day.
Amazing podcast, thank you so much. Nearly all my questions answered. In the hope that you monitor these comments, we live in the UK and the only way to get the ideal raw fresh organic grass fed grass finished goats/sheep milk, you'd have to not have a life. (Travel many hours to the farm and back) Available to us are different combinations of the above. Considering that (I've heard on a different podcast) sheep/goat milk is superior even to cow A2 milk due to the greater level of MCT contained, and accepting that one cannot get everything, which of the following would be better to compromise on? Cow A1, A2, goat/sheep, Raw vs pasteurised & homogenised Fresh vs frozen (most of the best milks are from far away farms and are sent in bulk frozen) Organic vs traditional vs industrial Grass fed & finished vs not
Paul, what about buttermilk? Also could you please say something about sprouts like alfafa and broccoli. No one seems to have anything to say about these. Thanks for your continuing work it's hugely appreciated.
He’s not going to like sprouts like that, full of anti-nutrients that cancel out what they do bring nutritionally. But if you don’t have a problem with eating them, continue on. I still eat some veggies but I’ve cut out the cruciferous and super high oxalates ones, spinach, kale, all that shit. I still eat mushrooms, onions, peppers, garlic, carrots.
I have a non dairy question that I hope you can answer. I’ve been mostly carnivore with a little dabbling in dairy, fruit, and roots for the past year and a half. It’s been great. Lost 150 pounds, got off meds, just awesome results. I have just eaten standard grocery store meat and done well on it. For the first time I decided to go to a local farm and get some fresh grass fed/finished meat. I bought several pounds of beef. My question/issue is that this farm meat has a gamey taste like venison. Is this normal? And if so what are grocery companies doing to get rid of that taste. Thank you for any help
I get my meat from a grass fed and finished beef place too, as well as my milk (mostly grass fed dairy cows). I'm guessing the more grassfed the animal, the more natural the flavors of the product. The milk has a more yellow tint to it and tastes a bit more gamey/natural. Also the meat is leaner/gamier because the cow wasn't fed grains to add that extra fat. That being said... no wonder a high carb/grain diet makes humans fat and most likely clogs arteries.
It most likely tastes different because store bought meat was raised eating corn/grains their whole lives which your taste buds are used to. Grass fed meat will have a more "natural" flavor to the meat since it's their natural diet. Also depends on if the meat has been aged before being sold which will affect the flavor. Just my two cents
There is a programme on RTE 1 tonight Monday 12th_July. Its called Dairys dirty secrets. It is important to me as a meat and dairy consumer how animals are farmed and treated. There is good animal husbandary and bad animal husbandry its important where and whom you buy from.
The raw milk cure was popular in the late 1800s and early 1900s. Read the work by Dr. Charles Sanford Porter and Dr. J.E. Crewe. In 1905 Dr. Porter published a book called "Milk Diet As A Remedy For Chronic Disease".
Ey Paul! Would love to hear your opinion on Unfortified nutritional yeast as a source of protein/amino acids, minerals, and b vitamins. It’s neither plant nor animal or course and it’s not as high in say leucine as animal sources but perhaps has a better AA profile compared to plant proteins and is perhaps more bioavailable. I’m wondering if you have any personal experience of its effects/concerns/efficacy.
You need to have a friendly debate on this subject with Ken Berry. He could use some education on the realm of "proper dairy" for the "proper human diet"
How do you manage this if you are lactose intolerant? I have been trying to get some back into my diet (organic raw, A2 cheese, milk) but still get gassy…any thoughts?
My stomach says dairy is bad. 😂😂But I was raised poor and didn’t have money for dairy so he used powdered milk (which was dried NF milk) so I don’t know if that affected how I digest real dairy. ❤
I much prefer the Weston price inclusionary diet rather than Saladinos exclusionary approach! Want to eat nuts? Per Weston price, Just soak them for 24 hours in an acid base. Same goes for oats and grains. Just make sure to eat lots of butter and meat! Also ! Big fan of raw dairy + raw dairy kefir though. It’s a game changer imo but, you didn’t speak about the wulzen factor. Good for arthritis prevention. I prefer jersey a2 raw milk which you can find in california (Claravale)
Imunomilk - Colostrum. Any possibility that you might sell this in a powder form? I currently take one from Kion specifically because its powder not capsules. Thanks.
I was thinking about the "French Paradox" & having higher amount of stearic acid rich foods, which will have higher amount of NAD+ to donate combined with a diet rich in sirtuin activating compounds like those found in red wine, & how that may play a role in better health, when compared to the average American diet, just thought I'd submit this thought on one of your most recent videos, I appreciate your content as well, thank you
Paul had you incorporated raw milk and dairy when you will still strict carnivore would you have remained carnivore? Milk is an excellent source of bioavailable electrolytes. Pottasium, calcium, magnesium, phosphorus in particular and in the proper ratios

QUESTION: Unfortunately, I live in a state that raw dairy is NOT legal, and there’s no dairy farms within reasonable driving distance… Would you recommend the A2 brand or the Fairlife brand?
43:00 I live in the suburbs of northern Virginia and can confirm the sale of raw milk is unfortunately illegal, so I'm very curious where they're getting theirs from
animal husbandry began at the same time as agriculture, about 12,000 years ago, some peoples blood lines are adapted to grains and beans some not and the same with milk. Also pasteurization is not the villain so much as homogenization which damages the fat molecules.
I have to leave milk out of my diet. I just discovered that it really flares my IBD. I think I always had issues with it because since I was a kid my stomach felt heavy after drinking milk.
Dairy is for growing animals, and for high energy requirements. If you're older, or live a modern sedentary lifestyle, eg, work at a desk, then you're diet should center around meat, and exclude dairy. It should be obvious to anyone of intelligence that food themselves are not objectively good or bad, but rather, a diet should be based on the requirements of your lifestyle and your current metabolic capacity. More specifically, a healthy diet correctly addresses these three components: 1) The demands of your lifestyle 2) Your current metabolic capacity (which changes based on your age and your past dietary habits) 3) Your genetics (which is mostly expressed in the above component) Paul lives a high energy lifestyle, so dairy is appropriate for him. Most Americans work at a desk and get little exercise, so dairy is not needed for them. This should be simple and obvious to anyone who has studied diet and health. Therefore, the question of whether dairy is good or bad is not relevant. The relevant question is whether dairy is good for you as an individual, good for your current lifestyle and whether your body can metabolize dairy according to your genetics.
Yes. The skin makes it tougher to digest and soaking removes most antinutrients. You can regain the crunch factor after soaking and peeling using a dehydrator or air fryer. Or toasting them.
Almonds are one of the foods with the highest amount of oxalates (check Sally Norton regarding almonds). Soaking does not remove oxalates. Drinking almond milk and almond butter makes oxalates more bioavailable and therefore more toxic. Almond flour is the worst. So if you want a small handful of almonds, you may be ok just blanching them (removing their skin) but don't use it as nut milk, flour or butter
What is your take on whey protein isolate, as a supplement, for those partaking in a carnivore diet? Many believe it's unnecessary, due to the sheer amount of protein you ingest already. I just put it in my coffee.
U need to consume protein alongside fat. The protein powder is just amino acids and when you don’t get the full range of AAs, like in real meat, and so are converted by the liver into sugars. Plus, protein powder often contains bullshit like seed oils etc. remove and replace with meat if u need protein
@@alex_4trth I do mix it with butter into my coffee. The brand I use I of high quality, omitting the use of any seed oils, and has a full amino acid profile. The main reason I use it in my coffee is for taste.
When making homemade yogurt with raw milk, one has to heat it to 140 degrees Fahrenheit. Would that not kill the beneficial enzymes in the raw milk? Does it not defeat the purpose?

@Kat Ashley I wish I could consume dairy, however I have to listen to my body. Since eating carnivore my system functions perfectly. I may try dairy again at some point just to see if I react differently.
@zingy1811 I had dairy all my life and gut issues all my life. I did not connect the dots. Since quitting dairy my gut health is so much better. I probably was consuming A1, however A2 caused problems too, even kefir which does not have lactose.
I had problems with dairy, then tride to eat raw chees together with raw meat an it helped a lot,i dont know exactly what it is,heard it long time ago from some raw meat youtuber.
42:35 Even when milk is pasteurized, it deactivates, or we use the word destroy, beneficial enzymes, as well as other types of bacteria during the pasteurization process. However, our Microbiome and our genes still read those genetic codes, even when it was deactivated by the heat. When the body doesn’t know what to do with deactivated codes, I’m sure our immune system reacts. Another good reason not to consume blood. Scientists do not fully understand how the consumption of blood whether it’s intravenously or as food, affects each individual in the long term or even the general population. Sometimes there are problems that happen with future generations. I think we’re seeing a lot of that at this point in history.
As a general rule, those things being canceled by modern medicine and those aligned with these entrenched and biased entities should be embraced (ie. dairy, meat, milk, eggs, and sunshine) should be fully embraced by those seeking health and / or reversal of chronic conditions. Thanks Paul!

It’s not a that big a deal. Just eat it if it doesn’t have a bunch of shit in it. Carnivore is unsustainable. No body sticks to it. Carnivores operate in streaks because they know the diet sucks. “15 days carnivore!” Right before they fall off the wagon for the 46th time
Is there any footage of Dr. Paul surfing? I’d love to see the carnivore MD in action!
They also drank blood daily by making small cuts on the necks of their horses.

What do you think about nutritional yeast?
Thanks Paul, great lecture about this topic, now clear to me.
Many thanks,
A future nurse.

A good thing to carry in your bag if you work 9-5 in an office are beef sticks and also pork rinds for the crunch and fresh and organic fruits. Make sure they are organic and grass-fed, with as little sugar as possible. There are many good ones in the marketplace.
Where did you find organic pork rinds?

Pasteurised dairy is a strong causal factor in type 1 diabetes.
If raw dairy is illegal where you live (e.g. Australia, Canada), you should avoid pasteurised dairy at all costs.
Not a strong enough correlation to be casual.
Pasteurized dairy is trash. At the very least get it vat pasteurized where to don’t boil it to hell
Raw honey promotes cell growth as well as colostrum.
I think it depends... when I stopped consuming dairy completely, my mood swings and anxiety went away within 3 days! Great talk, Paul. I'm on a mission to find raw milk now. I also go through roughly a gallon of heavy whipping cream per week. Gotta find that raw as well!!!!!

What would you prefer Paul, Raw A1 cheese or pasteurised A2 cheese?

So is a regular milk fine for no long term issues? Like a gallon of Borden?

In the hope that you monitor these comments, we live in the UK and the only way to get the ideal raw fresh organic grass fed grass finished goats/sheep milk, you'd have to not have a life. (Travel many hours to the farm and back)
Available to us are different combinations of the above.
Considering that (I've heard on a different podcast) sheep/goat milk is superior even to cow A2 milk due to the greater level of MCT contained, and accepting that one cannot get everything, which of the following would be better to compromise on?
Cow A1, A2, goat/sheep,
Raw vs pasteurised & homogenised
Fresh vs frozen (most of the best milks are from far away farms and are sent in bulk frozen)
Organic vs traditional vs industrial
Grass fed & finished vs not

Ey Paul! Would love to hear your opinion on Unfortified nutritional yeast as a source of protein/amino acids, minerals, and b vitamins. More specifically, a healthy diet correctly addresses these three components:
1) The demands of your lifestyle
2) Your current metabolic capacity (which changes based on your age and your past dietary habits)
3) Your genetics (which is mostly expressed in the above component)
Paul lives a high energy lifestyle, so dairy is appropriate for him.
My biggest concern would be hormones and cow antibiotics, not necessarily the nutrition side.
Do you still get muscle cramps, Dr Paul? If not, what made the difference for you?
What about estrogenic effects of dairy?
Does soaking almonds, and nuts, in water make them more nourishing?
Yes. The skin makes it tougher to digest and soaking removes most antinutrients. You can regain the crunch factor after soaking and peeling using a dehydrator or air fryer. Or toasting them.
@@madeleinegrayson8372 Thank you.

U need to consume protein alongside fat. The protein powder is just amino acids and when you don’t get the full range of AAs, like in real meat, and so are converted by the liver into sugars. Plus, protein powder often contains bullshit like seed oils etc. remove and replace with meat if u need protein
