★ABOUT ME★
Hi! I’m Hanbit, professional pastry chef and CEO of Sugar Lane Baking Academy based in Seoul, Korea. Funny enough, my background had nothing to do with baking - far from it. I studied mathematics at university and then worked in finance, strategy consulting and IT. Then one day in 2018, I quit my job and enrolled at a pastry school. I have loved it ever since!
As my story suggests, I really enjoy being a pastry chef and I am keen to share the joy of baking with as many people as possible. Baking can seem daunting at first but as long as you take it step-by-step anyone can do it - even someone with no baking background like myself managed to become a professional pastry chef!

Chef, what is the difference between this pudding and pannacotta?
Pannacotta is 100% cream and must using gelatine, pudding you can make with different type liquid and you can use agar instead of gelatine.
@MFR350 i used to make coconut pannacotta in my hotel, and it was not 100% cream. There was 300g of coconut puree to 700g of cream and gelatin ofcourse

@HanbitCho can you please explain why and how their setting power different. I know this much that agar agar comes from seaweed and needs to be heated up to activate its gelling properties, whereas gelatin is an animal based product that comes from bones, tissues and skin, which have collagen. And can you please tell me how a product made with agar and a product made with gelatin sit at room temperature? i mean whats the difference between their texture and stability. I would be really grateful for the same
