    I watched this almost a year ago and have probably cooked 100 meals with onion since then. Still do it this exact same way. So incredibly helpful.

      yeah with the exception of the horizontal cutting (starting around 0:34) that's not needed at all. I don't know why people keep doing that.

      Also, Jean Pierre never called the cut unnecessary, he was just showing a way to dice it without.

    As the cook of the household, I can honestly say this was a great technique to learn, it’s way quicker than what I was doing before and it dices your onion into the right size. Doesn’t always stop you from crying, but that’s because I take too long chopping the onion because I’m not paying attention.

      part of that could be your knives aren't sharp enough, If you crush and bruise the onion that will typically make you cry.

      Just buy a good knife, I bought a 10-inch chef knife with a rosewood handle from Victorinox. It's a great knife, and it's really sharp out of the box.

      The knife he’s using is a wustoff classic ikon. I have one and it’s amazing. To keep it razor sharp you’ll have to use a whetstone.

      Yeah you can get any knife to that level of sharpness if you know how to sharpen yourself. All that better knives do is have better fittings, geometry for the blade and depending on the brand, hardness so you don't need to sharpen as often. All knives will eventually need to be sharpened though.

    I'm being when I say this is by far the most important Gordon Ramsay cooking video I have ever watched. When you learn how to properly dice an onion it feels like you opened a door and no cooking task seems impossible. Many paths felt opened to me when I nailed this part of cooking.

    I use the same technique except that I do the horizontal slices before the vertical slits. I find it makes the onion less likely to start falling apart and become unmanageable while you’re doing the final set of chops. Learned it working in a kitchen though I’ve never been anything more than a line cook. And not a very good one at that lol

      Truth is though that a good sharp knife is the best way to prevent crying. Its the cell walls that get destroyed by a blunt knife that causes the water in the onion to vaporise, which is acidic. When contacting the eye, it condenses and turns the water in your eyes acidic, which irritates the eye. So keep your knife sharp and your fingers out the way!

      @@RonSwansonIsMyGod i mean, keeping the root on does help, because it prevents the onion from falling apart and more of its water gets evaporated into the air. Still, using a sharp knife will increase that effect greatly due to my earlier explanation.
      The same effect happens with leeks which when I had to prepare vegetables at the restaurant i worked at, i would do them first so my knife was at it's sharpest which held the tears off for as long as possible. Just a trade tip for you 🙂

      Without adsense, you can expect about $14 per 10000 views. Even without selling ads on this video, with 7.6million views Ramsey has made probably just under $10,000 of this video. While that sounds like a lot, it's over 4 years old, and judging from views mentioned in comments, half the views only came from this previous year. So, basically this video earned 5k over three years, then due to an influx in popularity it doubled its view count and earned another 5k in the past 12 months. Then UA-cam took their 45%, leaving him a few dollars over 5k. So about 1.25k a year. Not bad, but nothing to retire on. But I have investments that don't return that much, and considering he shot this in his kitchen with equipment he owned, he's well in the black on all fronts. And this is just one video. That's just standard UA-cam rates. Honestly though, he likely did negotiate better terms with adsense advertising rates because he's Gordon fucking Ramsey, so he's probably, in all honesty, paid for a year or two of college for one of his kids by filming himself cutting an onion.

    Here's another tip for you if chopping onions make you cry (forget running water taps and matches in your mouth and other tricks that in reality doesn't work):
    The reason onions make you cry is a substance that is the same as is used in tear gas. But there is a way to get around this. Since it is in liquid form, and it is contained in little compartments or "bubbles", a dull knife will crush rather than slice through these bubbles, which releases the substance as an aerosol. Once these small droplets fly around in the air and you get them in your eyes it reacts with the mucous membrane and irritates it and you get teared up. Now if the knife you're using is sharp it will slice these bubbles instead, resulting in a lot less of the substance spurting out in the air.
    tl;dr The sharper your knife is, the less you'll be crying. Because science.

      That is the wrong scientific reason for why your eyes water. Propanethiol S-oxide is created by the enzymes in the onion when you cut it open. This gets in your eyes and reacts with the water to form sulfuric acid. To stop this, you can wear goggles or chill the onion beforehand to slow the productivity of the enzymes.

What I'm saying is that crushing the "globes" (with a dull blade) releases more of the substance into the air as aerosol, while slicing through the globes with a sharp blade doesn't cause the same spray into the air, leaving your eyes less irritated.

      @Jacob Molyneux I've been cooking professionally for at least 14 years. I've done everything from applebees, fast service, full service, family, fine dining to catering for 1000 people. I've held the title of general manager, chef de partie, pantry chef, fine dining waiter and more. I've worked with numerous people who either graduated or were in the process of receiving culinary education. This method of cutting an onion is wasteful and slow. Culinary schools teach the standardized way of doing things, usually based on the traditional french brigade-style kitchen and there is merit to that, but this method of cutting is an exception.
      Edit: and I never said that juice sprays in your eyes, although it can on occasion haha but who cares if does, it's just a little onion burn.
