  • "Kick it up a notch” and “Bam!” are catchphrases that were popularized by celebrity chef Emeril Lagasse on his long-running show Emeril Live. The show made Lagasse one of the Food Network's most popular celebrity chefs in the late '90 and 2000s.
Besides being a master of Creole and Cajun cuisine, and introducing the world to a style of cooking that he calls “New New Orleans,” Lagasse has also built a culinary empire that includes restaurants, books, merchandising, and endorsements.
To find out more about this talented celebrity chef, let’s kick it up a notch and look into the truth about Emeril Lagasse.

Julia Child, both for her devotion to education about cooking and for her occasionally ham-fisted or ungainly bravura when things went wrong or when she felt she needed to push past some sort of difficulty in the kitchen. You couldn't help but love her combination of intelligence, Earhart-esque sense of conquer-the-world adventure, no-nonsense American sensibilities, quirky sense of humor, and even her occasional but lovable stubbornness. Jacques Pepin apparently had his hands full with Julia more than he always felt comfortable with, but Julia's path to TV fame was laid through an educational and 'can do'-at-home approach rather than via beating a path forward through the restaurant food service industry. Jacques is of course a world-class chef, but with a fairly quiet and unassuming manner, and also evident integrity. When I try his cooking techniques and suggestions they WORK. Julia & Jacques still managed to get along publicly in front of the camera and to make us enjoy their camaraderie, even if it was for them at times a bit forced or rehearsed.
Other celebrity chefs-I like Emeril for his good-heartedness, Alton Brown for his go-get-'em, oddball sense of humor, Jacques Pepin for his humble integrity, depth of knowledge/skill and very practical devotion to his art, and Rachel Ray for being a 'down home' gal originally from my part of upstate New York and for being 'no-nonsense practical' but still fun-loving all the time. I never warmed up much to Guy Fieri (for reasons I can't pin down); or to Anthony Bourdain (because of his seeming lack of humor); or, in the long run, to Gordon Ramsey (because his driven, overbearing management style is too stressfully like the worst parts of everyday life that one seeks to escape when watching TV). Even so, I can recognize that Gordon is an accomplished, careful, dedicated chef and a no-nonsense businessman who is no one's fool and knows how things must be. Jamie Oliver seems knowledgeable and 'lovable' while I somehow find Bobby Flay irritating and get tired of his 'southwestern take' on WAY too many things. Martin Yan is fun and personable but his schtick gets old pretty quick. Martha Stewart sometimes has useful tips to offer but she strikes me as 'stuck up' somehow.
Should celebrity chefs be more about education vs. entertainment? I would say that to succeed on TV, they have the ability to entertain somehow EVEN AS THEY ALSO GENUINELY EDUCATE. I think most people ARE looking for cooking tips to help themselves improve and to give them new ideas, but that the reason they seek out a celebrity chef on TV is also TO ENJOY SPENDING TIME WITH SOMEONE THEY CONSIDER A LIKABLE AND FUN FRIEND.
In terms of INTERNET 'celebrity' chefs, there are three standout great people who come to my mind: Laura Vitale ("Laura in the Kitchen"), the hilarious Chef John ("Food Wishes"), and Clara Cannucciari ("Great Depression Cooking") All of these folks have succeeded wonderfully because their channels present them with great pacing, and because they are all full of winsome personality, so it's fun to 'spend time' with each of them, although Clara is now deceased.

I used to work at Emeril’s in New Orleans, his first restaurant. I can say that in real life he is a super nice, down to earth guy. He’d drop by the restaurant maybe once a month and every time he was in he would take time to great every single table and thank them for coming to his restaurant and take pictures with anyone who asked. The environment working there was great too, not the super intense cut throat stuff you see about restaurants in the movies. I felt really proud to have the opportunity to work for him.

I can’t account for his finances, but I seriously doubt he was knowingly doing anything wrong. He has proven himself as a good human when no one else is looking. That’s a sign of integrity.

The crazy thing is when I was a young kid, I watched Emeril Live . I never watched a cooking show before that at all, and being a kid you'd think you would just want to watch cartoons. But this man, this guy, he helped me develop a love for food and creation. It got me in the kitchen, experimenting and creating dishes that probably weren't that good in hindsight. But it still got me in the kitchen, and through out that time, I've gotten much better. So thank you for inspiring someone, and helping them find a passion. Cheers Emeril. I now cook on my youtube channel and hopefully anyone who visits also gets inspired and enjoys my content :)

Emeril was and still is my favorite celebrity chef ever! He made you want to jump in there and cook up fun stuff. Before he left, I was a Food Channel junkie. Now, I hardly watch the Food Channel at all. Iron Chef (was fun). Iron Chef America wasn't. Today's competition formats are ok, but nothing close to what Emeril Life was! Not even close!

Over here on UA-cam you can find most of the great old shows, and there are literally DOZENS of talented, motivated, entertaining, and educational cooks! Forget the networks. They screwed us in return for garbage and flash...so I say let 'em die. I'm gonna watch some Cowboy Kent Rollins right now. Heck, he beat Bobby Flay head to head to kickstart his career. Check him out. And the BBQ Pit Boys. And Sam the Cooking Guy. And Smokin' and Grillin' wit AB. And Charlie Andrews. Need more? I know dozens! Well that was unexpectedly depressing.
I just remember Lagasse as a glowing beacon of positivity from my childhood, in particular when I had a lot of events and trauma to deal with in that time, and to be perfectly honest I can't ever really recall a moment I think of as Emril's "Downfall"... I just didn't see him on TV much anymore, I already owned his cookbooks, and I saw he still had brand items on store shelves, so I had just assumed he had retired from the on-camera work and focused on the more managerial side of his business.... I had NO idea that Food Network basically canned him, nor did I know he had to sell the rights to his branding to survive as part of Martha Stewart's media empire...
I mean, the guy is still managing restaurants across the country and he's able to give 500k to charity and relief efforts, so he's doing alright but... had no idea how many financial and emotional struggles this poor, wonderful man had to go through (and still is).... but I guess you can chock that up to how ridiculously well paid his salary has always been.

Competions on TV are not 100% real! I've been in many competions: you have two minutes to work out a plan with your apprentice, and 18 minutes to produce two meals, and its all based on a mystery ingredient....I remember one particular cook-off - the mystery ingredient was M&Ms, but we were able to incorporate this product successfully with filet Mignon, and won the competion!
I've also taught cooking classes for over 25 years, and the whole time I maintained my position as a full time Executive Chef for over 50 years. If you like to compete, competion can be a lot of fun. I've done food commercials, where I didn't get a rehersal, you get one shot and thats it, no retakes, so you better have your plan down or you'll look like a fool.
If your a professional chef working in a club, restaurant, hotel etc. you are automatically in competition with other establishments even if you don't know who they are, believe me their out there and they most likely know who you are! Competion will make you a better culinarian,
      Stay Well
