Vankaya pachadi is a variation of baingan ka bharta that is fuss free.
Ingredients I used:
eggplant
garlic
small onions
green chillies
tomato
salt
turmeric
red chilli powder
For tadka:
oil
mustard seeds
hing
curry leaves

You can use a kitchen mesh to solve the problem of the mess on the kitchen stove. In my childhood I saw my mom simply using a square cut piece of the iron mesh used on the doors and windows (the one that keeps the mosquitoes away). That is how we got to enjoy the baingan bharta (the the Punjabi dish) one or baingan chokha ( the popular chokha from the Bhojpuri cuisine of UP& Bihar) as often as we wanted.
We North Indians anyway just love the smokey flavour in our food be it the bhartas/chokhas or smoked dishes like dal, litti/baati, rice dishes and so on

That's vankaya bajji not pachadi. And you can cook it in cooker as well without frying.

TIP: Add charcoal embers in a small steel bowl or on aluminum foil and let sit for 5 minutes for the smoky flavor in the covered pot.

Actually, Vankaya pachadi is made with roasted brinjal. Traditionally, on coal and now on stove. The variation you made is probably just an alternative to not roast.

My hostel conteen make bharta like this, I sometimes feel like crying because there is nothing more beautiful than smokey baigan ka bharta with extra spice to me ( We don’t even use tomatos, because, we don’t want tomato to overpower Baigan ka smokey flavour, I notice, Indians use Tomato in almost everything, we Bangladeshis try to avoid using tomato in every Gravy / daal or bharta recipe because we want that main sabji,or ingredients to shine the most)
Also we never give taDka or choka to our bharta, in my area( my paternal home) they do make veg curry like this, we call it Ghonto (Eggplant, Kaccha banana, kaccha papida,Louki,Kaddu are few sabji, we make ghonto)
