What is the usecase for this? Because for lights you want dimmers.. also, HA on a raspberry is something you reallly want to stay away from..

sensor MUST use NTC? whether can use 1-wire sensor? such as DS18B20?
PT100/PT1000 is fine too. Maybe DS18B20 will work too. Need to be possible put on the side of the water pipe.
