Honestly I see this as a much better and easier way to cover the voids in certain parts of lots of model kits. Using puddy in every piece would be like overengineering a knife, you can bragg all about your skills but will be making your life miserable in the process... I certainly try to avoid puddy as much as I can due to my lack of skills so my comment might be a little bit [a hell-of-a-lot] biased, though
If I had to hazard a guess, it'd be because those holes are way too deep and the end result needs to be squared off and flat. It'd be a pain in the butt trying to get that surface smooth after the fact. Using a plate is just much quicker and easier. Putty is better for removing seam lines or doing curved surfaces or sculpting details. Not so much for hard-edged geometric things.
The coloring alone made me subscribe immediately! It's a beautiful piece of work thank you!

Did you have footage when you change the gundam face ?

Was just wondering but why don't you fill in the gaps with puddy but instead use plastic plate to cover them
