These PORK RIBS AL PASTOR were smoked like TEXAS BARBECUE (the result is incredible!)

    Adobo Demonstration:
    • Grill TACOS AL PASTOR ...
    Adobo Recipe:
    15 Guajillo
    4 ancho chiles
    3 arbol
    ½ medium white onion
    6 garlic cloves
    One cinnamon stick
    1 Bayleaf
    Add the rest of the ingredients part 2 to the blender after the boil
    ½ tsp Mx Oregano
    4 cloves
    ¼ cup fresh chopped or diced pineapple
    ½ cup pineapple juice
    2 tbs achiote (2 Oz)
    2 chipotle en adobo from a can
    2 tbs apple cider vinegar
    2 tbs Salt ( note: for the trompito and ground pork we used WOW)
    2 Cups the chile water
    Blend on high till you have a nice even adobo, check for consistency, it should be thick but slightly runny, add more of the chile water a little at a time if needed.

    This is why I love taco cooking. As a chef, you can get your whole point across in one or two bites. Same with sushi; you can tell your whole story with just a few pieces.

    Im 28, about a 2 years I started enjoying cooking my own food. I gotta say though I enjoy watching Arnie, he’s the perfect definition of a Chicano. I see myself being like him at his age😂👌🏼

    Man, I do beef ribs with pineapple, green peppers, red peppers I make my own barbecue sauce, sweet barbecue sauce that is Hawaiian style. You talk about good I smoke them first thing I do is smoke them in my smoker good then I put the barbecue sauce to them and glaze it. I do pork ribs about the same. I put my pork ribs in the oven on 375 for a couple hours with some apples cider and Coca-Cola you can literally pull the bone out of them. I don’t cook them till that happens. I finish them off in the smoker and same with the barbecue sauce. You talk about good man Hawaiian style, it is good

    Great idea. I wonder how it would turn out if you just used the dry spices associated with AL Pastor as a dry rub when smoking and using the marinade as a glaze at the end. I wonder if you would get better bark creation.

    Arnie! I made this according to your recipes. Came out way too salty. I had to put pieces of pineapple on each taco to make them edible. What went wrong. Went light on rub. Any ideas. Or is your Al Pastor recipe pretty salty.
    Meat was great just salty.

      Not salty at all, maybe check the recipe again, sometimes people take tsp as tbs which is teaspoon vs tablespoon. fyi many many people have made this adobo and no one ever has said it's salty. However we all have different palates so maybe

    I was just thinking about making al pastor ribs last week. I was just concerned about what it would do to the texture if you added pineapple or pineapple juice when marinating. I've found that pineapple or other acidic elements in a marinade can sometimes break down pork too much. I'm surprised you wear able to do such a long marinade without messing up the texture. I was thinking about only adding the pineapple just before the cook. It might not matter if you are going to pull the meat for tacos, but it could if you're eating it off the bone.

    I would prefer to eat these ribs as ribs. Not Taco it out. I like Hard Taco shells, but with Mince meat and seasoning. Ribs should be put on a plate and you use your hands to eat them. Not in a taco.

      Oh you can eat them however you like.I like to eat them off the bone Got a small pack of ribs from HEB, will have to try this, but will eat them as bone on ribs.I think HEB Grocery store has Goya ,s ready made adobo.
