So, they gave you a copy of the DLC that didn't have any options finished to adjust the new tools and functions? Yea, that seems about right for this dev team.
you can do the walls without having to open the menu for every single one (but be careful to not delete windows/doors when you're on a wall, and vice versa, like put doors/windows everywhere accidentally, for these you do have to open the menu, unfortunately)... also: try pointing _the thing_ at the floor, yo! (nice decals, btw... no idea how to change the colors, sorry >.>)

Didn't the e-mail say you could configure the checkout queue direction? If so, you could move the counter back where you had it, and change the queue so they're not lining up out the door. In the airbrush, it said press t for help. Maybe there's something in there about keybinding?
