My lacto pickles are still plenty crunchy. Throw some bayleaf in your jars when you ferment and it'll help keep it crisp. Haven't had a single mushy pickle, yet. And I pickle all sorts of foods.

You can use your home sink as an alternative to a pump to vacuum things. But you still need that acrylic or glass container.... Also you waste running water. Aspirator (sink pump)
There are vacuum sealing jars out there, I’m sure the pump wouldn’t be strong enough but I would like to see if they would work so you could make whole pickles, koolickles, pickled radish’s, etc. PS, love your show!

For anyone allergic to cucumbers, you should realize that the process of boiling the cucumbers in a brine with high heat (such as when canning pickles) breaks down some compounds in the cucumbers. I know one person that is not allergic to a common brand Kosher dill pickle that use a heat process (possible also an anaerobic process) in pickling but is allergic to all so-called refrigerator pickles.
