Every single ingredient has a distinctive taste: the tomatoes, the cheese, the dough. The technique to stretch the pizza is very specific, and the oven the pizza is baked in must be built in a certain way. It’s not easy to make a proper Pizza Napoletana. Been to Italia once. I stayed at this older couple who's daughter then 33 ran their old pizzeria down the road.
I was directed, gladly, to this old wood and brick building. The old man walked with me, sat me down and introduced me. After this, he left for home
She came up and asked me what I knew about pizza. Im a Baker myself. But I deceided to not tell her and told her instead to teach me.
What followed was a four hour long masterclass of try and taste. Of one unforgettable assault on my taste buds after the other.
Itallian pizza. Is a real experience. If you let them teach you, the correct way.

The "slap" on the dough of the Neapolitan pizza maker is protected by unesco, and that is the only thing they could protect. Unfortunately, many people all around the world do not know that, which is sad. Just like the many pizzas that exist. Ironically, here in London, you can find proper Neapolitan pizza at a fair price, and American pizza at 2-3x price and that could not generally be qualified as pizza, as it is extremely unhealthy and does not even taste similar to the original. But hey: if it is 2 am you can order everything.
This woman speaks such wonderful Italian. I am more in love with the way she talks than with the pizza.

The best pizzeria in Naples...da Michele. One of the oldest. Had the honor of eating there. Only 2 types of pizza with and without cheese. Also got to see the port where my great grandparents left Italy to come to their new life in America! Ciao Ciao!

Truly, nothing like it. I really appreciate the information about using Fior di Latte as the base cheese! Trying to use fresh buffalo milk mozzarella has been too watery, although the cow's 'whole milk mozzarella' is not quite the same thing as the fior de latte used in Naples, I imagine.
Well, there is unfortunately certain snobism outside Italy that makes people say "the only real mozzarella is the buffalo one", and if someone believes it (in the interest of "authenticity"), they waste money and good buffalo mozzarella for pizza where in fact it doesn't belong.

@@manin4568 man, there's many kinds of pizza in Italy, Naples style (the one shown in the video), Rome style, Sicily style and the classical one, trust me, the pizza you ate is probably a classical one, which is far to be the best pizza u can have, I'm from Milan, but I recognize that pizzas from the south are definitely superior
I think my next stop in my travel would be Naples to try simple pizza ,dough ,tomato sauce ,nothing else ,or basil and mozarella cheese

Pizza comes from the Greek word pitta, or pita or as the Hellenistic Anatolians called it pide. To this day you can find pide all over Turkey, especially in Central (Cappadocia) and Northern (Pontus) regions. Georgians have something similar called katchapuri. Considering Southern Italy was a Greek colony you can see the connection easily. By the way I am *not* saying Greeks, or Anatolians (modern day Turkey) or Georgians etc invented it.... we are simply talking about the origins of the name.

I’m English and my favourite food is pizza. I go regularly to an Italian restaurant in York, that is run by an Italian family and the food is heaven. Can’t stand all these high street shop types like dominoes, not a patch on a pizza, freshly made by a chef.
Indeed, all the commercial joints have kinda swayed way too farm from how light and tasteful the pizza and other Italian food is.

Making pizza is an art, I mean, it's not easy to prepare it.

Luckily, I have tried the Napolitano pizza and Sicilian pizza in Sicily the pizza taste is an art, it's very expensive art. I don't know why but when I was in Rome, the pizza was pretty normal where the taste cam be found anywhere. But, Pizza on a specific city of Italya is a diamond!

Just want to ask, if I go to Italy and get a pizza, is it mandatory to eat it with a fork and knife or I can have it with my hands?
While I'm not Italian, I hear that it is customary to eat a whole pizza in a restaurant with a knife and fork (apparently individual slices from street vendors are a different story). Although - especially as a tourist - you'll probably not face too much criticism if you eat it with your hands 🙂

Depends on the restaurateur, I suppose :). I'm sure many have a 'eat it however you wish' approach - it seems harsh to limit people to the speed of a knife and fork when there is giant, gorgeous pizza in front of them!

Flour and fermentation mostly! Dough will also have very different characteristics whether you use baker’s yeast or sourdough starter.

If you mean the kinda commercial grease or that poor thing that they call pizza in argentina absolutely topped with loads of cheese no, but there is 4 formaggi, cacio e pepe and other kinds of delicious “white” pizzas
@Sixgorillionshekelswindler Shlomo that’s a bad mozzarella then pal, but I can advise you to try and do a 4 cheese pizza, obviously you have to choose some types of cheese that don’t cover each other, but you should like it

@@DWFood I am not very familiar with the Swiss Italian part, but I grew up in the French-speaking part and the pizzas are usually delicious there. To the point where, when I first had pizza in Italy I was disappointed :) There is a large Italian community in Switzerland, the water is coming from Swiss mountains, the ingredients are of good quality. One should definitely give it a try when visiting Geneva or other Swiss-Romande cities.
As a northern Iitalian, you can't accuse me of bias. I urge you to also go to Roma for pizza. Roman Pizza is superior to Pizza Napoletana.

The reason why San Marzano tomatoes are more sweeter than other tomatoes, is because, the sheep's that are up in the mountains, when they let go, or give out, internal gas(Farting), those gazes, fall directly down into the valley where the San Marzano tomatoes are being grown.
The nitrous oxide, carbon dioxide and methane, are the gazes that emanate from these, male or female sheeps. Now you all know why San Marzano tomatoes are sweeter than most other tomatoes.

@@DWFood I would say yes, 95% of Americans don't really know, understands what a great food is. They have and are used to very low expectations....I have seen Americans choosing over a cheap $5 pepperoni Little Caesar's pizza over a Neapolitan Marguerita pizza....
