■Vanilla custard cream
260g milk
1/2 vanilla beans
3 egg yolks
45g sugar
18g cake flour
■Puff pastry
2 eggs
55g cake flour
85g water
2g salt
50g unsalted butter
■Chocolate cream
60g couverture sweet chocolate
9g sugar
100g heavy cream
pistachio

Good job. Here’s a tip. Vanilla is an expensive ingredient. I separate the seeds by mixing it in to the sugar instead of the cream. The stem still goes in to the pot and cooks adding flavor. If you bind vanilla to the sugar the seeds won’t get stuck in the pot. Resulting in more flavor full eclairs. 💟

First time I made these I didn’t mix the pastry for long enough after turning the fire back on, so for anyone else who tries eclairs for the first time, you should definitely mix for a good 2 minutes so it dries a bit ! ☺️ they taste amazing tho.

It is not as difficult as it seems. I tried another similar recipe from a famous Taiwanese blogger and the result was successful for the first time. Of course I failed when I tried again but that was my fault. This dessert is worth the effort.

I made these eclairs today and they turned out great! They had just the right amount of sweetness and were super light. It’s a perfect party dessert. This is a wonderful recipe and they were fairly easy to make. It took me about 2 and a half hours to make and hopefully I will get faster the more I make them. My family loves them and will definitely make them again!
