I tried these yesterday and they worked perfectly! I'm super happy. I used chocolate on its own instead of chocolate ganache for the coating and it adds extra crunchiness.

For those who actually want to make this cake:
*Check the efficiency of your starch. Some variants may be "weaker" and then you'll need to add 10g more than required. You don't want the filling to be too liquid. And wait until it cools to skin temperature before you put it in the fridge.
*Don't cook butter and water for too long. The water may evaporate too much and this will make your dough too thick.
*When Nino said to wait 15 minutes after cooking the dough - it means that it should actually cool to room temperature. If it's too hot, the dough will become too thick after adding eggs, which will make it harder to squeeze out onto the baking sheet, and after baking it will be too rubbery.
*Check the size of the piping tip! It's good if you can manage to squeeze out eclairs slightly thicker than your index finger. Assuming you have fine fingers like Nino :D If they're too thin, eclairs will be too thin as well after baking. And if you don't get them right from the first try, scoop 'em up and put the dough back in the bag, and squeeze out again. Don't squeeze the dough on top to make them thicker, because it won't mold with the existing layer, it will grow into an additional one!
I love Nino's recipes because they are actually doable 😊 And I miss the roasting as well...
