For those who actually want to make this cake: *Check the efficiency of your starch. Some variants may be "weaker" and then you'll need to add 10g more than required. You don't want the filling to be too liquid. And wait until it cools to skin temperature before you put it in the fridge. *Don't cook butter and water for too long. The water may evaporate too much and this will make your dough too thick. *When Nino said to wait 15 minutes after cooking the dough - it means that it should actually cool to room temperature. If it's too hot, the dough will become too thick after adding eggs, which will make it harder to squeeze out onto the baking sheet, and after baking it will be too rubbery. *Check the size of the piping tip! It's good if you can manage to squeeze out eclairs slightly thicker than your index finger. Assuming you have fine fingers like Nino :D If they're too thin, eclairs will be too thin as well after baking. And if you don't get them right from the first try, scoop 'em up and put the dough back in the bag, and squeeze out again. Don't squeeze the dough on top to make them thicker, because it won't mold with the existing layer, it will grow into an additional one! I love Nino's recipes because they are actually doable 😊 And I miss the roasting as well...

Maybe this is also why my eclairs didn't rise, because the dough was too wet. And I couldn't pipe in the cream because it's too flat. I got better the next time and it is wonderful. TIP: Beat the eggs first so it is easy to measure and pour. 2. DO NOT OPEN THE OVEN DOOR WHEN IT IS STILL BAKING. Although I didn't do this, I read this off a website and wanted to share. I recommend you to read reasons why the eclairs don't rise first before starting to see where you need to be careful. Also, try to keep the temperature the same. My oven doesn't keep the same temperature all the time. It sometimes gets higher than what I want or lower and I always have to keep an eye on it. The second time I made this, I let the temperature go higher and it slightly got burned but still tastes good. I don't know what else to add but here are some tips I got from my experience and the internet. I hope this helps and thay your eclairs will turn out great!

Thanks for the recipe! It’s really delicious~ Note to future self: Start at 190°C until risen and then turn to 170° then last few min turn to 150°C. Can make 2 batches as 1 batch only result in 15 eclairs.
I've made them. They are delicious! Thank you for your recipes! What I like most about your recipes is the quantitative proportion of batter and cream. I'm from germany and most of german recipes have more batter than cream, so you always have to try and do some math. I hate it! But I guess everyone hates cakes, that are not completely covered in cream :P

Tip: if you want a more authentic eclair, try to get the eclairs (before baking) to be about 3.5-4cm tall and 5cm long and dont make them wrinkly, they should look like a mini baguette.

I've made them. They are delicious! Thank you for your recipes! What I like most about your recipes is the quantitative proportion of batter and cream. I'm from germany and most of german recipes have more batter than cream, so you always have to try and do some math. I hate it! But I guess everyone hates cakes, that are not completely covered in cream :P

Mình vừa làm thử eclair theo công thức của Nino. Kem trứng vanilla ko thì hơi ngọt, nhưng ăn chung vs chocolate glaze thì lại cực kì hợp. Mình thì chọn bơm kem ở mặt trên, như vậy khi nhúng vào glaze sẽ đc phủ một lớp kín, nhìn đẹp mắt hơn. Cám ơn Nino rất nhiều :))

Tip: if you want a more authentic eclair, try to get the eclairs (before baking) to be about 3.5-4cm tall and 5cm long and dont make them wrinkly, they should look like a mini baguette.
