I’m no knife expert but I’m pretty sure sharpness is not the best way to judge a knife. I feel like I heard somewhere a good knife will be able to stay sharp for longer and maintain the blade or something whatever that means

The Gordon Ramsey knife is just factory set sharp knife it's probably a steel that is easy to doll while the $400 knife will last you longer easier to sharpen and is for specific tasks
And if you want to chop better I would use a pinch grip instead of putting your finger on the top of the blade

The thing is some kinves come with what we call a factory blade, essentially meaning that it is sharp but it's not at it's potential, you'll need use a steel or a wet stone and hone the blade. Normally a knives are scaled on isn't it's factory sharpness but it's a ability to stay sharp and the length of the tang, metal quality and durability. Normally sharpness is down to the user to hone in the blade.

I don't get is why people keep compairing knives by how sharp they are. If you sharpen a butter knife correctly, it will cut through anything u want. But that won't make it a good knife. It will : 1) Not retain the sharpness well 2) Will be hella fking hard to resharpen 3) Will be insanely difficult to use .
Start testing knoves properly and pay them the correct respect, like they do in "forged in fire"
