Are there different curry powders from different regions? I have never seen cumin that dark and I’ve never seen or heard of the masala powder you used. I try to visit ethnic stores but I’ll keep looking. Thank you! I need to incorporate bitter melon to lower my A1C
That is roasted cumin (roasted geera). You can find that as well as amchar masala and curry powder in a west indian grocery store. Also your location plays heavily in having access to these products!

you make your own geera (roasted cumin). Get the seeds and put in a dry pan on a low heat. it will go dark. then ground.
