  • Hot and spicy pickled hot dogs and lil smokies!!! The lil smokies are the bomb diggity!!!
    Recipe: 4 cups of vinegar, 1 cup of hot sauce, 1 1/2 tbs. of garlic, 1/4 cup of sugar, 3 tbs of pickling spice, red pepper flakes to taste ( I forgot the red pepper flakes in the video) I put 1 tbs.

    Turned out Excellent, gave them to family and friends and
    everyone just loves them. I plan on making more this weekend as I picked up some beef Hot dogs from Costco.
    doesnt't work as well with hard boiled eggs. -

      Yes sir! I am so glad that y'all liked them! Have you tried the little smokies? I am working on doing alot more pickled and fermented foods as well as many other recipes. I hope that you will enjoy the videos and the food. I loved watching Shotgun Red's videos and he seemed like a very nice person.

    Just getting into pickling also. Did some eggs the other day with the franks. Can’t wait for them to be ready. Also seen on another channel. To keep jars from breaking. Put hot water in sink to acclimate the jars to heat. Will be dining the smokies soon. Thanks.

    Fill your jars with hot tap water and let them sit 5 minutes to heat them up.Sit the empty jars on a dry dish towel so the bottom doesn't have the heat pulled out of it.Have you ever put the dogs in the brine before you jar them up?

    Bar S used to make a ring polish sausage that I absolutely love. I noticed it started to get hard to find, not sure if you can even find it anymore, but I think it would make very tasty pickled sausage.

      this may sound weird but google pickled frog balls, it is a pickled brussel sprout recipe that is freaking awesome. Usually do this every other year along with dilly beans.

      A week or two minimum for the hot dogs....a week for the lil smokies and to be honest the lil smokies are a lot better! I was going to make some more smokies this weekend but ran out of time.

    I’ve seen a few recipes similar to this and they all look good depending on ur taste. I wonder if cooking the mixture and dogs in a pressure cooker for a few minutes would speed up the process?

      OutdoorsInVA I would put them in the fridge right after I made them. I waited a week before I opened my first jar. Did you make the smokies or the hot dogs?

    From the OLD! hills of Tennessee! Not like the city folk today! you NEVER! had Tennessee wild pickled country smoked assorted "POSSUM" parts! Took them to a Christmas lunch. to this day they talk about the crazy thing I would bring for our Christmas lunch. 2022 the word Christmas has been replaced with Holaday lunch. I retired. I asked what Holiday is it.

      Hey Ed, if you canned them they will probably be good for a couple of years. If you did the quick method, which is what I did, I have eaten them a couple of months later. My wife says that I have an iron stomach though so you really just need to use your own judgement. If you haven’t tried the little smokies yet I would definitely recommend those . Let me know how they come out. Oh, by the way I would wait two weeks after putting them up before I tried them.

      I left them whole but you need to wait a week minimum before you eat them.

      I am not sure but I have a jar in the fridge that I made during this video. When I get home this weekend I will try them and let you know. At least we will know up to that point. I have some of the smokies too.

      I tried some smokies and some hot dogs that have been in the refrigerator for four months now. I just opened them today and they are a lot spicier and have a lot more flavor then the ones that I just left for a week! They tasted really good to me! Sorry it took so long to reply.

      I pickle some eggs 10 months ago and did NOT put them in the refrigerator. They turn out good. My guess hot doggs are the same.

      I didn’t refrigerate them. After you open them then I would refrigerate them. They didn’t last long. Everyone that tried them loved them.

      It has been so long since I made that video I just don't remember. I am sure that I got that recipe from the late Shotgun Red. I would have to go back and see if I missed something but I do know that they came out great. The little smokeies were awesome!!!

      I am sorry but I just saw your question. They don't seal like they do when you can something and that is why it is called a quick pickle method. If you need them to have a long shelf life I don't see why you couldn't use a canning procedure.

      Wisconsin Life this is not the canning method, the lids don’t seal like they would if you boiled the jars. I have seen others turn them upside down to help seal when they use the canning method but I have never had to do that to seal them. I think I will try onions in them next time.

      Anytime you put hot liquid into a cold jar it's more likely than not it could break, all you have to do is warm the jar first and you don't have to worry about that. It's like if your car window was coated with snow and ice and you poured a pan of boiling water on it you would crack your windshield completely. The molecules of the glass cannot expand fast enough and they break instead.

      Even the original recipe didn't have water so my guess is that there is enough in the hot sauce although this is only a guess. I am going to make some more in the next couple of weeks and will probably test a new recipe...If you have any suggestions I would love to here them! Thanks in advance.

      Yeah sorry about that but I had some sound issues and had to use sound effects and such in order to even use the footage. I am doing a new recipe and all for the little smokies hopefully next weekend....I have to build my grandson a zipline so the smokies may have to wait.

      Dude I don't even like spam on its own...except it is okay fried on a sandwich I guess. The hot dogs are okay but the little smokies are great!!! I made another batch of them and put them in smaller jars and shared them with a couple of guys at work, of course I kept a stash for my self...I made some pickled eggs a few weeks ago and used that brine for one of the jars of eggs and they came out really good too. Any way sorry that spam didn't work out for you but you should try those smokies.

      Yeah, I started working on my health about 3 months ago. I have lost 12 pounds in the gut but started gaining it back since I started lifting weights. I cringe when I go back and see and hear myself on these videos. Thanks for the comment.
