It takes four hours for one pressing. Three times during the pressing they do the "retrousse", scooping the thick and hard press cake of crushed grapes back into the middle of the press. The pressing then continues. Of the 4000 kilos of grapes put in the press they get 2550 litres of grape juice, split into cuvee and taille.
