Did the trip from Schenectady to the Cape in 2001-2002. Can relate to much of your trip. I did it in 3 legs from Schenectady to Little Creek, Little Creek to Georgetown, and Georgetown to Cape Coral with no water in Lake O because of no water. Boatings fun, as you discovered.

It would have been fun to watch your "pre-trip" routine. Also a nice touch would have been watching you start your engines, turning on all of your electronics for the days trip. Also would be cool to see the process of the fuel stop in its entirety
Yeah manatee are in every body of water we've got. I've seen 'em from the St Mary's River to Key Largo. When you're swimming and a pod surfaces 10 feet from you it scares the holy crap out of you because that's the natural reaction to something *unidentified THAT LARGE!* When I was a kid fishing on the dock of The Bolles School in Jacksonville we hooked a 10 or 12 foot Bull Shark, so that's the first thing I think of when I see something that large.
Our advice is to stay on the boat ... we bought in Fort Pierce back in 2019 and found that there's way too much crime for us ... we should have moved to Vero or Port St Lucie

It is about 16’ air draft. I can lower it a bit if I remove the anchor light. I had no trouble on the ICW from NY to Cape Coral Florida. Any low bridges do open for us.
To answer the max height question, most of the ICW can be navigated with a sailboat. Except for the northern NY canals and towards the Great Lakes. There is a max height of 16 or so out that way.
