I did a different style air vice and finished it last week. I did use larger air pistons than the one I was looking at premade. I did spend about half as much cash as it would have cost to buy it. I do love to tinker so that is fun, not work, for me.
If you use a dowel rod centering kit. it will give you a guide to keep it straight and its self centering. Plus it clamps tight. Norther tool and Harbor freight has it.
Good timing on the video. This is my project for next week. I ordered my plates online and they shipped yesterday. I do need to get a vice like you have. I did like how you step on it to hold it in place and drill with a hand drill. I was trying to figure out how I could do it with my table top drill press but it can only do 3" at a time. I will probably start my holes on the drill press hoping to keep them straighter than I can with a hand drill then finish like you did. Thanks.
Great way to DIY those plates. Would be cool to see the air vice sometime. Sure a person could save a load of cash.

How did you make your air vice. Would like to see a video on it
Also, interesting to see you use your crescent wrench to torque your hex bit. That is a new one for me.
