If you restructure it some with making some notes longer and some pauses shorter to accomodate while still sticking to 7/8 (instead of just playing 4/4 over 7/8) then smoke on the water lends itself surprisingly well to this time sig. 2+2+3. 2+2+1+2. 2+2+3. 2+5. Is how I'd structure it. This is the subdivisions and each number is a note/chord. I think this is the best way to play it in 7/8.
