- wok from home is back for a special mini-series created with you, our wagamama community. earlier this week, steve sent student + wagamama super fan, ella, everything she’d need to cook her favourite dish for her bubble - the legendary hot yasai katsu curry. watch on to see steve + ella cook together with the help of a whatsapp video call + a few DIY tripods! if you want to cook with steve, comment below with a recipe you’d like to try at home. steve will be picking a lucky winner later this week to cook with him in the next episode of wok from home

the sauce (vegan)

2-3 tablespoons vegetable oil
1 onion, finely chopped
1 garlic clove, crushed
2.5cm piece of ginger, peeled + grated
1 teaspoon turmeric
2 heaped tablespoons mild
curry powder
1 tablespoon plain flour
300ml veg stock
100ml coconut milk
1 teaspoon light soy sauce
1 teaspoon sugar
2 tbsp chilli flakes
50ml sriracha / tabasco

the dish (vegan version)

120g rice (any rice will do!)
1 quantity katsu curry sauce
1x aubergine
1x sweet potato
100g plain flour (50g for dusting + 50g for your batter)
100g panko breadcrumbs
75ml vegetable oil, for deep-frying

Been making this since the first Katsu video dropped at the start of lockdown but just throwing the firecracker sauce in from the other recipe. Pretty much the same ingredients but an excuse to make everything you eat "firecracker" also

Where do we get the pickles from? Never found them in any supermarkets. They're like £15 on amazon.

Ive tried replicating this before and always assumed the sweet potato was boiled before frying. Will be cutting it thinner and following your method now

I'll rustle up the wok fried greens and bang bang cauliflower with you for your next vid if you're up for it. Have attempted it a couple of times from the wagamamas cook book but could use some pointers from the main man himself.
