- what I eat in a day videos are some of my favorites because honestly, we know by now how much I love food 😅 either way, here are a few meals I've been loving that are vegetarian, some plant-based, and of course delicious!
ingredients for crispy grain salad:
1/2 cup barley (I didn't have any so I used orzo)
1/4 cup buckwheat groats
1 red bell pepper
10 shishitos
1/4 lb green beans
1 cup grape/cherry/sungold tomatoes, halved
10 castelvetrano olives, halved
3 scallions, thinly sliced on a bias
1 cup chopped parsley
1/2 cup chopped mint
Zest of 1 lemon
Juice of 1/2 lemon
1-2 tbsp olive oil
