I'll be making tiramisu today! I haven't made this in a while.
I used egg yolk and mascarpone so it'll taste more like an original tiramisu.
+Taste
I used a non-sour mascarpone so it will mostly suit everyone's taste.
The coffee scent and chocolate powder goes well with cream.
I didn't refrigerate it so the cream might seem a little watery but if you keep it in the refrigerator it will harden a bit.
Doesn't matter what kind of cup or container you make it in but because there's no gelatin included, a moose ring shouldn't be used.:)
This will serve about 6 people so if you'd like less cut everything into half.
Kahlua isn't necessary. You can use Mascarpone cream cheese also.
You can use deep black coffee without any water instead of espresso.
(No sugar in coffee)
▶Ingredients
ladyfingers
3 eggs, 70g sugar, 3ml vanilla extract, 70g cake flour, 30g powdered sugar
coffee syrup
60ml espresso, 150ml water, 30ml sugar, 20ml kahlua
mascarpone cream
5 egg yolks, 130g sugar, 500g mascarpone, 335ml whipping cream, 30g kahlua
cocoa powder
[Lady Fingers Recipe]
1) Separate the egg whites and yolk. Whip the egg whites
2) Add in sugar 3 times and keep on whipping
3) When the meringue becomes a thicker consistency add in the yolk and vanilla and gently mix
4) Add weak flour and use a spatula to whip the meringue
5) When everything is completely mixed and there's no powder left, pour it into a pastry bag and put a 1~1.5cm tip on top.
6) Squeeze out the batter into finger sizes and sprinkle sugar powder on top
7) Pre-heat the oven at 170 Celsius and cook for 12min. Then let it cool off.
[Coffee Syrup Recipe]
1) Place the ingredients into a flat plate and mix until the sugar all melts
[Mascarpone Cream Recipe]
1) Mix the egg yolk and sugar
2) Cook it in a double boiler (keep on stirring)
3) Heat until 75 Celsius (If you don't have a thermometer check the consistency) (This process will take up to 10 min)
4) Place the egg yolk aside and put the mascarpone in an extra bowl and whip with a spatula
5) Add the egg yolk a little by time into the mascarpone and mix (+ add some kahlua also)
6) When it's thoroughly mixed, mix sugar and whipped cream in another bowl and whip it
7) Add this whipped cream into the mascarpone batter 2 times
8) Prepare plates and containers for the finished cream, lady fingers and coffee syrup
[Last Touch]
1) Slightly dip the tips of the lady fingers in coffee syrup and lay it out on a container
2) Put some cream on top
3) Repeat step 1 and 2 once more
4) Refrigerate it and before eating sprinkle some chocolate powder

노른자와 마스카포네로 만드는 티라미수 라서 오리지널에 조금 더 비슷한 맛이에요

신맛이 없는 마스카포네로 만들어서 호불호가 크게 갈리지 않을 것 같은 맛입니다
부드럽고 커피 향과 코코아가루가 크림과 잘 어울립니다
저는 냉장실에 넣지 않고 그냥 먹어서 크림이 너무 묽어 보이는데
냉장실에 좀 두면 먹기 좋은 정도로 굳습니다
컵에 만들어도 괜찮고 찬기에 만들어도 괜찮습니다
젤라틴이 안 들어가니 되도록 무스 링에는 만들지 마세요 :)
약 6인분 정도 되니 많으면 양을 절반으로 줄여 만들어보세요
깔루아는 생략 가능합니다
마스카포네는 크림치즈로 대체 가능합니다
에스프레소 대신 진한 블랙커피를 준비하고 물을 생략해도 됩니다
(설탕이 들어간 커피라면 설탕도 생략합니다)
▶재료 (약 7~8인분 분량, 2시간 내외 소요)
+ 레이디핑거
계란 3개, 설탕 70g, 바닐라 익스트랙 3ml, 박력분 70g, 슈가파우더 30g
+ 커피시럽
에스프레소 60ml, 물 150ml, 설탕 30ml, 깔루아 20ml
+ 마스카포네 크림
노른자 5개, 설탕 130g, 마스카포네 500g, 생크림 335ml, 깔루아 30g
+ 코코아가루
레이디핑거 만들기
1) 흰자와 노른자를 분리한 뒤 흰자를 휘핑합니다
2) 설탕을 3번 나눠 넣어가며 휘핑합니다
3) 뿔이 살짝 휘는 머랭에 노른자와 바닐라를 넣고 가볍게 섞어줍니다
4) 박력분을 체쳐 넣고 주걱으로 머랭이 죽지 않게 섞어줍니다
5) 날가루가 보이지 않으면 1~1.5cm 깍지를 끼운 짤주머니에 담아 팬 위에 짜줍니다
6) 손가락 길이 정도로 짠 반죽 위에 슈가파우더를 뿌려줍니다
7) 170도 예열된 오븐에 12분 구워준 다음 식혀줍니다
커피시럽 만들기
1) 재료들을 평평한 그릇에 담아 설탕이 다 녹도록 섞어줍니다
마스카포네 크림 만들기
1) 노른자와 설탕을 섞어줍니다
2) 뜨거운 물 위에 볼을 올려 중탕으로 데워줍니다 (계속 저어주세요)
3) 온도계가 있으면 75도 까지 중탕해주고 없다면 영상의 농도를 확인해주세요
(시간이 꽤나 걸립니다 (10분 내외)
4) 노른자는 잠시 옆에 두고 다른 볼에 마스카포네를 넣고 주걱으로 풀어줍니다
5) 노른자 반죽을 마스카포네에 조금씩 넣어가며 섞어줍니다 (+깔루아도 넣고 섞습니다)
6) 골고루 섞이면 다른 볼에 생크림과 설탕을 넣고 단단하게 휘핑해줍니다
7) 휘핑한 생크림을 마스카포네 반죽에 2번 정도 나눠 넣어가며 섞어줍니다
8) 골고루 섞인 크림과 레이디핑거, 커피시럽, 그리고 담을 용기를 준비합니다
마무리
1) 레이디핑거를 커피시럽에 살짝만 담근 다음 준비한 용기에 깔아줍니다
2) 그 위에 크림을 적당히 올려줍니다
3) 1,2번을 한번 더 반복합니다
4) 냉장보관 한 뒤 먹기 직전에 코코아가루를 뿌려줍니다

Obviously you don't have to make the savoiardi or the mascarpone yourself, just buy those and then follow the recipe. It's really hard to fuck it up, so give it a try! haha

Tu Luu No it's not. Whipped cream is cream being whipped. Whipped egg whites is called meringue. He used meringue and whipped cream in his recipe.

You don’t need to cook cream and eggs before mixing with mascarpone, in tiramisù.
I don’t like very much the consistence of mascarpone, too far from what in Italy we call a mascarpone, too similar to a kind of cream.
No Kahlua: maybe Amaretto, if you want.
And I really don’t like whipped cream in tiramisù: a big deal.
Very good for ladyfingers... Few in Italy are able to do it, and we usually buy industrial one. I think your ladyfinger are really good..
