  • Here's the third, and second hottest, of the four products sent to me by TNT Spices: a Sriracha-style sauce bulked up with a medley of hot peppers and some seriously exotic spice blends.

    We understand that Sir-HOT-Cha might not have resonated with you in the same way as our previous sauces. Every palate is unique, and we respect your opinion.
    Your knowledge of Asian and Thai cuisine is impressive, and we were intrigued by your comparison. We want to clarify that while Sir-HOT-Cha is inspired by sriracha, it's actually a completely different recipe. Unlike traditional sriracha, we don’t ferment our ingredients or use Fresno peppers. Our unique blend includes red bell, ghost, Thai, and Carolina Reaper peppers, along with our proprietary Umami Bomb seasoning for a fermented flavor profile.

      The Sambal sauce that this reminded me of is by Chabé. There is a similarity in sweetness and heat level (sir-HOT-cha is unambiguously hotter, though) and I found myself considering its use in the same type of dish as I use Sambal - mixed in to Nasi Goreng or Mie Goreng, added to Dumpling sauce and other sauces and marinades, drizzled over ramen bowls and hot pots, maybe even mixed with some ketchup to add to a sandwich or burger. A huge test of sir-HOT-cha will be its usability over eggs - because that is what the majority of my sauce collection is used for.
