    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes.     Your wok is set too high due to the stove in between wok and table. Maybe its not a problem by now that you have grown taller after 7 yrs since this was made. Otherwise, this is the best video about how to make this dish that I have searched so far today.

    Excellent flavor. Maybe u could add a bit of water to your minced chicken so it does not clump up in the wok

    I like to make shredded chicken and then toss in a little sauce. In a butter lettuce leaf I layer some rice, chicken, thin cucumber strips, mint, basil, and cilantro. For a dipping sauce, I use fish sauce, sugar, a lot of red pepper flake, and a squeeze of lime juice. If I don't have lettuce I'll use rice wrappers.

    Maybe its because I'm a giant, but it always looks like you are standing on your tiptoes when at the Wok. I need to make this recipe at home cause I've been looking for a good lettuce wrap recipe.

    I’ve tried so many lettuce wraps and never found one that rang my bell until now. The oyster sauce and dark soy did it! These wraps are to die for. Thanks Pai.

    I just made Chicken Lettuce Wrap last week. I did mine with oyster sauce and fish sauce. Me and my mon use to wrap the chicken up with rice together.

      A vegan for 4 1/2 years I use Wan Ja Shan vegetarian mushroom oyster sauce. It’s excellent and hard to tell the difference from authentic oyster sauce. Amazon or an Asian Market.

    I have eaten Peking duck in Taiwan many times and I have never seen it made into a lettuce wrap. All of the meat is eaten in a thin pancake with green onion. The lettuce wraps must be a western thing...

      +Jonathan Benke In every Chinese restaurants I've been to, in Thailand and here, only the skin is served with the thin pancakes, so I guess in Taiwan they do it differently!

      +joyjoyoo most ppl aren't aware that, a side from garnishes, authentic Chinese food is never served with raw vegetables (including lettuce).

      for clarification, the way main land chinese have peking duck is different from thai's.
      in China and country influenced mainly by chinese culture like Taiwan, every single bite of peking duck will be sliced and served with both skin and meat
      while in Thai which is more affected by cantonese food , this recipe will be served skin and meat separetely.

      Hi Adam here, and for sure, I don't see anything in the written recipe hot-thai-kitchen.com/chicken-lettuce-wrap/ that won't last in the fridge for a few days. That said you could always freeze it. (Which is usually Pai's fall back :)) Cheers!

      +Christian Walk Thanks for the request! Outside of Thailand it's very hard to find one of the main ingredients for the filling, sweet preserved daikon, so it's not the most accessible dish for most people. But i'll keep it in mind as an idea!

    Awesome! I’m allergic to soy so I use aminos. I like to add mushrooms or other veggies I find at the store that day. I sometimes slice radish and put ground peanuts on top. I’m hungry now

      Hi Manilyn! ... and yes definitely, just up the amount of soy sauce or add a bit of fish sauce to compensate. (You'll have to adjust by taste to get the saltiness right.) Cheers! Adam

    So good. Authentic flavor. We used ground turkey and it tastes so good. And the dark Filipino soy sauce is Silver Swan or Datu Puti. Enjoy.

    I take those mung bean threads that I usually put into my (fried or fresh) spring rolls and plunge them into hot oil (instead of hot water) for a couple of seconds, then extract them. I crumble them up and put them on top of the filling to get a nice crunch. Though those lettuce wrap copy-cat recipes never say this, it's my perception that P. F. Chang's does that. In fact, I'd swear to it.

    Hoisin sauce is derived from sweet potato? you could say that, being an Asian chef, or perhaps you just don't know-- and commercial brands are just plain HFCS and/ or sugar. Make this better by marinating the chicken (soy, ginger, garlic, brown sugar, rice vinegar, sesame oil) without commercial ingredients, reduce the marinade to a glaze, add crunchy veggies (cabbage, carrot, scallion, and/ or even sweet potato slivers) and use a greener/ healthier lettuce than iceburg.
