No no, people are misguiding you. Home Office never wants your personal messages. They want log that how many messages were done b/w each other. And its not mandatory, if you provide proof of genuine relationships that will be enough. The Officer just wanted to make sure the marriage is not a set up for visa or sham marriage. Provide pictures with dates, any confusion feel free to ask.

As long your bank statement is printed by the bank then you don't need. But if you have printed yourself and has no logo and your address, then you need to get sign & stamp on it. Best approach is visit bank and ask them to print. If the bank account is online bank like Monzo, chase then the statement will have the logo and that is acceptable. If Home Office has doubt they will get it verified.
If its UK bank then online bank statement, showing your address / transactions / logo / date that would be fine and acceptable, we always submitted that and never had an issue. But if you are outside UK and bank is outside UK then get it sign & stamp and scan it to make it pdf to upload
You can apply Marriage Visitor Visa, but it all depends what is your plan after wedding. If you want to stay in your Home Country then marriage visitor visa is the best option.
