Nice work, I was wondering when this beef jerky slicer would reappear in your videos. Bought the same one awhile back but still in the box. Sure beats the entire process of partially freezing a lump of beef before slicing it. Jeez almost cuts the time down in half.
DAMN.. That Original mixture is for 5lbs of meat. There is no way that was 5lbs? That's gonna be salty as shit. When I make jerky I use a lot of Cabala's seasoning as well. What I do is I take 1 pack of seasoning and 1 pack of the cure and then pour both in a spice shaker that i have ordered from Amazon and mix it up and then shake the seasoning over the jerky meat on both sides like you're seasoning a steak then let it rest in bowl in the fridge for 24 hours and then take it out after 24 hrs and rack the jerky meat for the dehydrator. Turns out perfect every time
Ive made a lot of jerkey over the years. Its best to trim off all the fat before running it through your slicer. The fat runes the taste of the jerkey

Jerry you have to either cut all the fat off or use really lean meat. The fat will make your jerky go rancid. I won't store very long.
It will be ok when it’s frozen and then eaten within a day but I know what you mean
@BackCountryWrenching my jerky never lasts long enough to freeze in the freezer let alone go rancid. I've seen 5 lbs go in 2 days. 😆
