Najafi's famous gheimeh is a votive food that is cooked during Muharram days in Dolat Abad neighborhood of Shahre Ray in the south of Tehran.
They use three lamb and one whole veal to make Najafi gheimeh. After the meat is cooked, its fat is mashed with chickpeas separately and then the meat juice is added to it.
In the next step, the lamb and veal meat, which has been separated from the onions and bones, is shredded. The meat is mashed in a large pot, then it is slowly added to the chickpeas, which are being stirred and cooked. When the meat is cooked in the large pots, and the chickpeas are mixed with various spices such as cumin, lemon powder, and pepper.
They add black pepper, cinnamon, special spices for gheimeh, and finally cardamom, and finally add tomato paste and mix it until it turns red. They start 12 pm and it continues until 2 am.
We went to Dhareez Street, which is a few minutes away from Salalah, and it is the mine and center of tropical fruits such as bananas, coconuts, jackfruit, papaya, avocado, Indian almonds and many other delicious fruits that are planted in the gardens of this area.
Here they have fresh coconut water as well as fresh coconut oil that you can get.
On the days of Muharram, especially Tasu'a and Ashura, Shia muslims mourn for the martyrdom of their third imam, Imam Hossein, and various votive food and offerings are cooked and distributed among the people.
This ceremony is held in different cities of Iran with different customs and traditions of each city. For example, in Dolat Abad, Shahre ray or Mashal Gardani (carrying torches) is one of the special events of Tasua and Ashura, which starts on the 8th night of Muharram and continues until the night of Ashura. The Mashal (torch) is a long and thin stick on which 20 to 40 torches are installed.

the real name is imam Hussein stew and it uses fresh lamb , today most restaurants don't call it imam Hussein stew , they call it gheimeh and they use cheap imported meat or veal or beef , but the real thing , imam Hussein stew uses real saffron water , fresh lamb and real distilled rose water and homemade oil from butter and homemade tomato paste and a hint of real kewra water , it tastes a lot better than your average gheimeh you get at some restaurant

Here in Canada we had the Iraqi gheymeh for moharam. it is simple not bad, pretty healthy. dolat abad is located in the southern part of Tehran. It is a noticeable Arab community live there & they serve the best Shawarmas in Iran there which is very similar to Syrian & Lebanese ways.
Irani and Iraqi food is very much salty no spice, Pakistani going to Iran Iraq specially in Arbaeen often say so

@@RajabiTraveller well it could be from iraqi , its called imam Hussein stew so maybe it is , when it comes to kabobs and stews or stuff like that , its hard to tell the origins , but they should not be using veal meat , imam Hussein stew is made with lamb or beef , they tried to save money by using veal but they should not be using veal , beef and veal is not used in religious events , either lamb or chicken , veal is never used , its small mistake but its fine , some guy probably tried to save money but its against customs and tradition

Dear Elizabeth, it's not a celebration it's about the commemoration of Imam Hussein and his family, the Grand Son of the Prophet s.a.w killed by the army of Yazid, be him cursed, and his army. This event is at the core of the Shia, Sunni split and the gathering in Karbela where Imam Hussein was killed is nowadays one of the biggest gathering worldwide each year.

So the deeper Husayni message is all about standing up for truth, justice, against oppression & tyranny & as a result helping those who truly need it whilst receiving divine salvation. The Husayni message, may I add is for everyone & especially for those who wish to seek greater courage to learn from it, as opposed to just one set of Muslims. to be honest & is a totally universal in it's spiritual essence.
