Just thinking of biting the chewy part of the meat makes me want to gag
Char siu is savory with a nice sweetness, and the glaze (when cooked right) adds a firm texture to the outside) while it's a bit crumbly in the middle.
I usually just swallow the chewy part as soon as I discover it because the longer it stays in my mouth the more I'm conscious about how I look to other people as try not to gag.

Singaporeans are blessed with food choices - you have the hawker markets for the concentration of a whole region of food, you have the independent eateries like this, you have the expensive posh restaurants, and you have the big chain places for when you just can't be bothered to choose... I have built, more or less, a copy of the Chinese vertical oven in my garden in Britain, principally for roasting duck but now I intend to try Char Siu, just like this. It looks so good! Thank you both.
