I played against this Nf3 variation vs a CM in a otb rapid tournament. I just played Nf6 because I was unsure what to do, and we ended up in a position where after I castled kingside, he hunted my king to like b4, and then I somehow got him with a rook sacrifice and checkmate haha I know it sounds like I was just getting crushed by a CM and then got lucky, but if I recall correctly I was actually slightly higher rated (I was like 1930 in Rapid FIDE, he was like 1900 flat)
Yeah I think the best moves (like Bc5) aren't that intuitive and I can definitely see Nf6 causing you big problems. Congrats on turning it around but no I don't think it's just a CM crushing a 1900, no offense but CMs aren't amazing anyway compared to 1900-2100 players. It's kinda a weird title. I'm starting to look into more obscure variations of my favourite openings like the Nf3 Vienna, Cambridge springs for the slav and I'm releasing a Gurgenidze Caro kann tomorrow which I'm really excited about exploring further!

1. e4 e5 2. Nc3 Nf6 3. f4 d5 4. fxe5 Nxe4 5. Nf3 (5. Qf3 Allows Black to trade queens with 5...Nc6 6. Bb5 Nxc3 7. dxc3 Qh4+ 8. g3 Qe4+) 5... Bc5 6. d4 Bb4 7. Bd2 c5 8. Bd3 Nxd2 9. Qxd2 cxd4 (9...Nc6 10. a3) 10. Nxd4 Nc6 11. Qf4 with good prospects.
