My moms family is French Canadian I fondly remember my Pépère teaching me to make Creton. My favorite part was him telling me what we were going to make and trying to say the name properly, he was so patient till finally he tells me "no, no, never mind, as long as it tasted right its ok if you can't pronounce it." 20+ years later I probably still mispronounce it but I've taught it to my children and my daughter who is off on her own now makes it for friends. Its truly a taste that's brings back Wonderfull memories.

You're welcome. I actually strongly disagree with you. Making Mixed Spice is quite easy and gives the exact flavor to the Creton. I'm French Canadian by heritage (American by birth) and we used to eat this stuff by the kilo when we would visit family in Quebec, I have been trying to find a recipe that tastes like what I remember and who better than a fellow French Canadian from Quebec to show me what to use to make it myself.

Hi Frankie, i love your recipe ! I am French Canadian from my fathers side. My grandparents were born in Quebec and traveled to the states when they got married. My memere made a meat pie every big holiday. They used to call it "sea pout", i could be butchering the name but do you know what it is and if so, would you have a recipe for it? She used to cook it in huge very deep pot all night layered with different meats, layered with onions, potato, another meat and so on. Any idea of what i am describing? We always had Creton every time we would visit her. We loved it.
Good morning Di ☀️☕ The recipe you're talking about is called Cipaille and it's a lovely recipe. I do have a recipe but I'm waiting to gather the "right" ingredients so I can make the "real deal". Cipaille can be made with partridge, venison, wild rabbit (this is the real deal), or simply with ground beef-pork-veal (alternative ingredients). As you said, it's layered with onions & potatoes and wrap in a dough. As soon as I can have my hand on the wild-game meats, count on me, I'll be featuring this incredible Québécois recipe. Frankie, My fathers family was from Quebec and I love Cretons. Thank you. I What I can't find is a stew with brown gravy theyjust called ragout. It had pigs knuckles and feet. There was. a thick homemade noodle or dumpling. Do you have an idea on what this was?

Yes, I know exactly what you're talking about. It's Meatballs & Pig's Feet Stew ~ Ragoût de Boulettes & Pattes de Cochon! It's coming up on December 16th, 2021. Prior to this, How to Grill Flour is coming up on November 13th, 2021. This help to make the gravy... a long process but so worth it! Ragoût is such a Québécois' tradition... yum! For dessert, there's a thick dumpling cooked in maple syrup... is that what you meant? If it's the case, it's Grand-Pères (grandfathers) coming up in 2022. Had my first Creton spread in the Lac-St-Jean region in Quebec and must say they were the best! Have been trying to reproduce the recipe on many occasions without much success, but will give it another try. It always comes out too crumbly! Otherwise thanks for sharing your recipe
I understand you very well and that's the reason why I add some heavy cream as a binding ingredient so the creton doesn't get crumbly. Also using an immersion blender helps as well to keep everything together. Give it a try... Have a great week silverfox47! ☺

Creton which is from Québec, Canada is similar to a pâté therefore treat it the same way; spread on crackers, bread, toast, etc. Enjoy your day ☺
