PERFECT KAMUT Bread made with Freshly Milled Flour

    Kamut Sandwich Bread
    Ingredients
    * 3 cups warm water
    * 1 1/2 tbsps Instant Yeast
    * 1/3 cup honey
    * 4 cups (480g) freshly milled kamut
    * 1 1/2 teaspoons Redmond real salt
    * 1 tbsp vital wheat gluten, optional
    * 1/3 cup olive oil
    Instructions
    * Put warm water, olive oil, salt and honey in your mixing bowl.
    * In a medium bowl. Put your milled kamut flour, vital wheat gluten, optional, into the bowl. Mix ingredients and set aside.
    * Add 3 cups of the flour mixture into the liquid mixture and mix on low until everything is well mixed.
    * Let this mixture sit in the mixing bowl, covered, for 30 minutes to allow the Kamut to absorb the liquid. After 30 minutes, add the remaining flour.
    * Once you have added the last bit of the flour mixture, let the dough knead for about 10-20 minutes to develop some elasticity.
    * Your dough should be slightly firm, but also sticky. You want to be able to form your dough into loaves or one single loaf by putting in a larger pan.
    * Now it is time to let it rise. Put a few drops of oil in a large bowl or leave in your mixer bowl. Cover it with tea towel and keep it in a warm place until it is doubled in size. This could take up to 45 minutes to an hour. Mine was ready in 30 minutes, GA humidity!
    * Punch down the dough and pour a little bit of oil onto a pastry mat or counter. I like to cut my dough in half if making two loaves and weight it, optional, or make one large loaf.
    * Begin the preheating of your oven to 350F
    * Once risen, place in your oven and bake for 30 minutes. After 30 minutes, take the bread out of the oven and temp the bread with a digital thermometer. You want the temp to read at 200-205F, if not reading at those variances put back in the oven for 8 minutes and temp again, to keep your bread from over browning, place parchment paper on the top.
    * Once the temp is at the stated degrees, remove them from their pans and lay on their sides on a baking rack to cool, and this will keep them from imploding, Julia Child tip. Let bread completely cool before slicing.
