I love watching your family meals. Reminds me of my life in the 70's and 80's with kiddos everywhere and baking constantly. I'm an old baker...professionally. Might I make a suggestion that will help your schedule AND help with the nutrition that will require ONLY passive time? Use your same recipe...but half the yeast. Let the dough sit and slowly rise (fermentation) till it rises to point of no longer being rounded in same bowl. 4 hrs or more depending on temperature. Then shape and put in loaf pan. Cover loosely and put into frig after resting (after shape) 30 mins or even less. Then after breakfast...take loaf out of refrigerator...and put into well preheated oven. I think you will learn the best timing for your home environment. A long fermentation and a cool rise...allows the gluten to be more digestible. AND if your running late the next day you have probably 24 + hrs of refrigerator time to decide when to put that load in the oven. You will usually have a lighter crumb result. Generally old time bakers always use cool rises for bulk AND final shaping...for scheduling and TASTE...AND to help keep bread fresher with the natural acids that are formed during the fermentation. Don't think you have to worry much about bread getting stale with so many kids. LOL! But for your recipe...and 100% fresh ground wheat...I would mix by hand OR mixer and ferment and shape in-between kids. Put in frig, I use a large bag and put loaf pan in and make it loose to not constrict the top. Then into hot oven the next day AFTER breakfast...utilizing the already heated up oven from morning biscuits or muffins. Win Win. OR find a Cool Rise recipe from an old farm journal book. I have many if your interested...which work with a "straight dough" method as your is. I only suggest the long bulk fermentation and low yeast alternative because I found I could eat my own bread without a tummy ache....IF I used less yeast and low room temp slow fermentations and final rise.
@@tammyr2966 Remember...the posted video used fresh (within a week) of whole ground wheat. I don't recommend that for NEW bakers I've taught. Aged ground flour...or 50/50 whole ground organic with white flour will be easier to learn with IMHO. I have had some explosive results and run away coarse grained loaves with freshly ground whole (unsifted) wheat flour, assuming organic sources. Different brands or varieties, will give diff results...but I always use least amt of yeast which is half (for Granddaughter baking time) or none for Nana baking alone time...and only adjust the time of the bulk ferment. Even as a professional baker of basic farm style breads in the 70's, I had a whole lot of bricks (whole grain loaves) to feed the kiddos cause life gets in the way and so does the Texas weather. I learned to sift some of that bran out...and use it on top or on a bread peel for baking on a stone. Home is home...NOT work with walk ins and proofing cabinets. LOL! Homemade breads are almost all good tasting. Texture might be a little lacking till you know what a fully risen loaf looks like. IF bulk fermented to where top is less rounded...but before it starts to sink...your there. Shaped Loaf may not look as risen in frig, but if more than 2 hrs and less than 12...you will not have to guess. Just let loaf sit 20 mins while preheating and your job is done. Practice Practice!
Based on you having to clarify the nutrition actually in homemade hot cocoa and fluff I can tell quite a few commenters don’t actually cook from scratch like you. You are very right. Just because it is sweet does not mean it is unhealthy. Having an understanding of true nutrition, whole food nutrition, takes time and a whole lot of research. I would encourage those who are interested to check out Nourishing Traditions by the Weston Price Foundation, or visit their website. Though it is not the only resource out there, it is the foundation for more learning.
It has been great fun watching your creativity through this challenge!! We have been doing our version at home as well. I would LOVE to see what the fridge and freezers look like at the completion of your challenge!!

Some people sure are judgemental! Even if the hot cocoa with marshmallow fluff wasn't as nutritional, the meals you prepare with lots of veggies and fruits, good grains, etc, it's ok to have comfort foods and treats!!! And when every meal you prepare is not only home made but also includes all of your own meats, fruits & veggies, your family is not ingesting all of the preservatives and sugar that most families do today!!! The last few weeks we've had green beans, summer squash, tomato sauce, raspberries, spinach, black beans, pea shoots, and a seed loaf, since you inspired me to use up the freezer! We grow all this stuff in the warmer months and freeze it for when they're out of season, then forget they're in there and spend the winter eating supermarket vegetables. Thanks for the timely shove in the right direction!

I continuous brew kombucha on a seedling heat mat during the colder months. Since we use so much coconut oil, I keep a jar on the heat mat so it stays soft/liquid. It is a convenient way to use the mat for many purposes. I often incubate my milk kefir and other mesophilic yogurts on the mat as well.
I wonder if I could get a sourdough starter going on one?? My sourdough just didn’t take off like it should and I think it’s because we don’t run our heat in the house til we have to and then I only it not from 65°-68° max.
@@amberkeever8565 I don't see why not. I use it for that sometimes too. Just be warned- when it is that warm it will be ready to use faster. The temperature you describe should not be impairing growth, maybe just slowing it down. Getting it up and running on a heat mat and then maintaining it at normal temperature or even in the refrigerator afterward is prudent. Good luck!!
Texas tip. Use a large ziploc bag (I’ve seen Target bags used as well🤣) to cut two circles the size of your tortilla press. Use them, wash, dry and store in your tortilla press. Saves on parchment paper.
I like your videos for inspiration. I do that type of challenge in the end of every moth do to my economic situation and I do almost all my bread myself and fore my boyfriend and I freeze meals when I get leftovers fore myself or my boyfriend. Or I do som thing els from it fore lunch or dinner the day after. He is a diabetic and I am allergic to many vegetables and fruits and also nuts and some types of sprouts and outer things. I have hade my allergies sins a young age so I have learned to cook whit the things that I can have. I do most of my cooking from scratch sins it is a way to not get sick and it is a time fore just me and the same whit baking. I enjoy making jam and other things when I can and learn about it from the older generation like my grandparents. Both my grandmas and one of my grate grandmas told me how to knit when I was about 5-6 years old and I love doing it still. Right now I am knitting blankets and outer things fore baby packs that go to less fortune parents in other parts of the world. Fore me that and giving clods and food to our homeless shelter is my way of doing what God put me her fore as well as helping family and friends in the way I can.
I love this challenge! We met so many great people through our channel! We had to stop for almost 9 days due to renovation in the kitchen. I truly thought I would still be able to do the challenge during this time but it was absolutely impossible when our kitchen was in pieces!! Lots of sandwiches and microwaved leftovers happened in those 9 days! Ugh!! Back on track.. and even the kids are excited for a MEAL today!! Never thought that day would come!

My no shop and "deep" pantry challenge starts now. Stepped outside and bolted right back in to put on my respirator. YIKES!! Almonds went commando overnight. I am so intolerant to the chemicals released during the beautiful bloom. Mask on, I took care of essentials and popped back in. Since almond boom happens every year (yes please; my area is the world's biggest grower of them), I just plan accordingly to stay home even more than usual during the strongest part of the bloom. I've been making a concerted effort to use up things that I don't use as often all along, but now I start in earnest. Thanks for the inspiration to be a better steward. I made almost exactly this same post on Becky's (One Acre Homestead) channel as well. You two are who I've been following the most for this.
I love to see what you make each week. I have started using up some of my canned fruit butters in the weekend pancakes that I make. I also have been doing some organizing of my sewing room and found a number of NEW infant, toddler and young girl patterns and wondered if this would be something Grace would want for her sewing?
Love watching your videos. A sweet spot in a hectic world. Suggestion for tortillas from someone who married into a Mexican family. Add a little melted lard or fat. It completely elevates the flavor and texture and makes them much easier to handle when pressing.
Enjoyed it-i love watching the pantry meals! The carrot souffle looked delicious. My Mom had it at her workplace and it was one of their most popular dishes. I like that you can eat it as a side dish or dessert : ) The kids are so talented. Love watching David bake, and the girls sew and make crafts. The little boys are so sweet. This is a great recipe! I especially like that it is dairy free. I cook all dairy free so I’m always looking for more ways to eat dairy free. I make cooking videos too. I’d love to learn more from each other!!
I've been working through this challenge for the last six weeks. While I've purchased some salad greens, and some milk, as well as ingredients for my cooking class at school, I've been working hard to eliminate stocks of things that have been left for a while. The number of empty mason jars that have been hauled to the cellar has been astounding! I've been cleaning out jams (using in my oatmeal - great suggestion!), making homemade bagels to eat on the way to work, since eating oatmeal at home and then driving an hour leaves me starving long before lunch! Today I made homemade chili (used a pound of dried beans rather than store bought canned beans) with spices, hamburger from my freezer, and homemade corn bread. I realized that my 50# bag of flour isn't going to last until the end of the school year - but I can run to the bulk grocery in the next couple of weeks when I have a weather window to make the trip. I'm already thinking about what I want to preserve (and how) for the summer, based on what I've found in the root cellar, pantry and freezer over the last six weeks. I'm thinking more pie filling than jams, freezing blueberries again (I didn't go berry picking last summer as I still had a gallon freezer bag left from the year before!), and trying to find a good local source for raspberries and blackberries for my freezer. Lent starts on Wednesday, so I also want to tackle the 40 bags in 40 days challenge for that. It's a good time to reduce, reuse and recycle things that wouldn't get used by passing them to others (thrift stores) or using up (my 50# bag of flour - which is down to about 10#). I want to tackle making my own homemade pasta over the next several weeks - the fellas want stuffed shells, which I make with ground pork from our pig and alfredo sauce. That will get a few more items out of my pantry/freezer before I start the restock process. I did go to the store last week on a supply run to gather paper products, laundry and dish soap, shampoo and conditioner, olive oil for the shelf, and coffee filters. That was a fairly expensive trip, but I'm trying to be stocked on all of that stuff before I start gardening so I can just buy canning/freezing supplies during the summer.

We have Leftover Surprise most Thursdays. 😀. Dad is away at an elder meeting on Thursday nights and doesn’t like leftovers, leftovers have piled up or a few days and trash is picked up on Friday mornings. Win. Win.

You have helped me to get so creative in my kitchen. We only have 3 kids, but having just my husband working while I'm caring for our kids this helps so much to stretch our budget every month and also help me to repurpose so many things for extra meals and snacks!
Thank you so much for sharing what you do during the pantry challenge! I am learning SO MUCH about creative, no waste cooking, and how to make substitutions in recipes. I am not a natural in the kitchen, nor creative....so thank you for inspiring me and giving me courage to try new things . Also, I've always thought that taste and nutrition need to trump appearance. However, I have to wonder if warmer lighting would be helpful to appearance for filming purposes.

I have been loving these videos. I’m continuing through March only shopping for milk and essential items that I run out of. I still have lots of stuff to use up to free up room in the freezer. As I’m only cooking for one person it takes a longer time to go through things. I’m enjoying the challenge and really getting creative on the meals I’m making.

I was away for a month in Florida, so I am going to start today the challenge thru this month and thru March. I will only shop for fruit, fresh veggies and dairy.
I was wondering how many mason jars you emptied during this challenge? I know you used lots, but like mine pantry, it still looks full! which is awesome. I know you pulled out from other storage areas too. Reserves of canned foods is always important because of failures of crops, and sickness. Husband broke his leg at harvest time one year. But daughter and I, with help, managed to preserve almost all of it! Still feel proud about that feat because I thought I couldn't do it,but WE did.
Masa you said it correctly M “ah” I grew up on homemade tortillas so I love that you make them. Also this video motivated me to thaw out some of my frozen garden zucchini for zucchini bread. I usually add walnuts and make a separate loaf with chocolate chips.

I’m all for finding ways to skip the grocery store by making items at home. Just a tip for you. The little snippets that you add in of the kiddos, I’m guessing you took the videos with a cell phone (I do all my videos using my cell phone)… if you flip the phone to a horizontal position, it makes the video show up as full size in the videos. Jenny Can Cook on UA-cam has a wonderful no-knead, tiny amount of yeast, bake-in-a-Dutch oven recipe. It is the easiest, best bread I have ever made.

I put jam in plain yogurt…which adds sweetness and flavour. I also use plain yogurt as a sour cream substitute with mayo and herbs for veggie dips.
I love to drain, season and BROIL our canned carrots until they get a little darkness on them. They taste really yummy that way!

It is a convenient way to use the mat for many purposes. I often incubate my milk kefir and other mesophilic yogurts on the mat as well.

I wonder if I could get a sourdough starter going on one?? My sourdough just didn’t take off like it should and I think it’s because we don’t run our heat in the house til we have to and then I only it not from 65°-68° max.
@@amberkeever8565 I don't see why not. I use it for that sometimes too. Just be warned- when it is that warm it will be ready to use faster. The temperature you describe should not be impairing growth, maybe just slowing it down. Getting it up and running on a heat mat and then maintaining it at normal temperature or even in the refrigerator afterward is prudent. Good luck!!

Texas tip. Use a large ziploc bag (I’ve seen Target bags used as well🤣) to cut two circles the size of your tortilla press. Use them, wash, dry and store in your tortilla press. Saves on parchment paper.
I like your videos for inspiration. I do that type of challenge in the end of every moth do to my economic situation and I do almost all my bread myself and fore my boyfriend and I freeze meals when I get leftovers fore myself or my boyfriend. Or I do som thing els from it fore lunch or dinner the day after. He is a diabetic and I am allergic to many vegetables and fruits and also nuts and some types of sprouts and outer things. I have hade my allergies sins a young age so I have learned to cook whit the things that I can have. I do most of my cooking from scratch sins it is a way to not get sick and it is a time fore just me and the same whit baking. I enjoy making jam and other things when I can and learn about it from the older generation like my grandparents. Both my grandmas and one of my grate grandmas told me how to knit when I was about 5-6 years old and I love doing it still. Right now I am knitting blankets and outer things fore baby packs that go to less fortune parents in other parts of the world. Fore me that and giving clods and food to our homeless shelter is my way of doing what God put me her fore as well as helping family and friends in the way I can.
I love this challenge! We met so many great people through our channel! We had to stop for almost 9 days due to renovation in the kitchen. I truly thought I would still be able to do the challenge during this time but it was absolutely impossible when our kitchen was in pieces!! Lots of sandwiches and microwaved leftovers happened in those 9 days! Ugh!! Back on track.. and even the kids are excited for a MEAL today!! Never thought that day would come!

My no shop and "deep" pantry challenge starts now. Stepped outside and bolted right back in to put on my respirator. YIKES!! Almonds went commando overnight. I am so intolerant to the chemicals released during the beautiful bloom. Mask on, I took care of essentials and popped back in. Since almond boom happens every year (yes please; my area is the world's biggest grower of them), I just plan accordingly to stay home even more than usual during the strongest part of the bloom. I've been making a concerted effort to use up things that I don't use as often all along, but now I start in earnest. Thanks for the inspiration to be a better steward.

Love watching your videos. A sweet spot in a hectic world. Suggestion for tortillas from someone who married into a Mexican family. Add a little melted lard or fat. It completely elevates the flavor and texture and makes them much easier to handle when pressing.
Enjoyed it-i love watching the pantry meals! The carrot souffle looked delicious. My Mom had it at her workplace and it was one of their most popular dishes. I like that you can eat it as a side dish or dessert : ) The kids are so talented. Love watching David bake, and the girls sew and make crafts. The little boys are so sweet. I've been working through this challenge for the last six weeks. While I've purchased some salad greens, and some milk, as well as ingredients for my cooking class at school, I've been working hard to eliminate stocks of things that have been left for a while. The number of empty mason jars that have been hauled to the cellar has been astounding! I've been cleaning out jams (using in my oatmeal - great suggestion!), making homemade bagels to eat on the way to work, since eating oatmeal at home and then driving an hour leaves me starving long before lunch! Today I made homemade chili (used a pound of dried beans rather than store bought canned beans) with spices, hamburger from my freezer, and homemade corn bread. I realized that my 50# bag of flour isn't going to last until the end of the school year - but I can run to the bulk grocery in the next couple of weeks when I have a weather window to make the trip. I'm already thinking about what I want to preserve (and how) for the summer, based on what I've found in the root cellar, pantry and freezer over the last six weeks. I'm thinking more pie filling than jams, freezing blueberries again (I didn't go berry picking last summer as I still had a gallon freezer bag left from the year before!), and trying to find a good local source for raspberries and blackberries for my freezer. Lent starts on Wednesday, so I also want to tackle the 40 bags in 40 days challenge for that. It's a good time to reduce, reuse and recycle things that wouldn't get used by passing them to others (thrift stores) or using up (my 50# bag of flour - which is down to about 10#). I want to tackle making my own homemade pasta over the next several weeks - the fellas want stuffed shells, which I make with ground pork from our pig and alfredo sauce. That will get a few more items out of my pantry/freezer before I start the restock process. I did go to the store last week on a supply run to gather paper products, laundry and dish soap, shampoo and conditioner, olive oil for the shelf, and coffee filters. That was a fairly expensive trip, but I'm trying to be stocked on all of that stuff before I start gardening so I can just buy canning/freezing supplies during the summer.

We have Leftover Surprise most Thursdays. 😀. Dad is away at an elder meeting on Thursday nights and doesn’t like leftovers, leftovers have piled up or a few days and trash is picked up on Friday mornings. Win. Win.

You have helped me to get so creative in my kitchen. We only have 3 kids, but having just my husband working while I'm caring for our kids this helps so much to stretch our budget every month and also help me to repurpose so many things for extra meals and snacks!

I have been loving these videos. I’m continuing through March only shopping for milk and essential items that I run out of. I still have lots of stuff to use up to free up room in the freezer. I was wondering how many mason jars you emptied during this challenge? I know you used lots, but like mine pantry, it still looks full! which is awesome. I know you pulled out from other storage areas too. Reserves of canned foods is always important because of failures of crops, and sickness. Husband broke his leg at harvest time one year. But daughter and I, with help, managed to preserve almost all of it! Still feel proud about that feat because I thought I couldn't do it,but WE did.

Masa you said it correctly M “ah” I grew up on homemade tortillas so I love that you make them. Also this video motivated me to thaw out some of my frozen garden zucchini for zucchini bread. I usually add walnuts and make a separate loaf with chocolate chips.

Just a tip for you. The little snippets that you add in of the kiddos, I’m guessing you took the videos with a cell phone (I do all my videos using my cell phone)… if you flip the phone to a horizontal position, it makes the video show up as full size in the videos. I hope that helps!

For a dairy free family, you sure eat a lot of eggs. Aren't they dairy? It is amazing how you come up with so many meals with pantry/freezer staples.
Eggs are not dairy. They come from chickens. Dairy comes from cows or other mammals.
