And obviously I also find Jessica / Three Rivers Homestead to be an inspiration! 😄 I am not to a point where I can “officially” start home steading by any stretch of the imagination (my husband is in the US Marines and we will have to move every two or three years for a while longer), but I am trying to do little things that I can within my home to prepare me for it. Like finally learning to can and learning to sew (both of which I still need to begin 😬 lol!), those kinds of things. May God bless you in your efforts as well!

Just discovered your videos. I love them! I won't be cooking big meals like that since it's just me, but they give me some good ideas. When I cook beef heart, I hollow it out and stuff it with stuffing and bake it. I also like beef tongue. Thank you for the inspiration!❤❤❤

My children and most of my grandchildren are grown, my husband has passed so it is just me and I absolutely love to watch your Pantry Challenge meals. I am careful to use up leftovers and you have given me ideas, especially the combining of soups to make a new soup. Great job!

I come here because I find what you do strong, inspired, loving and down right awesome. I can't believe there are people out there who come here to criticize you, your meals, or whatever other nonsense they feel like spewing forth that day. They should get over themselves or leave. While I’m not a homesteader, I do buy in bulk when items are on sale or in season. I really enjoy seeing how you utilize your “found” pantry and freezer items and am often inspired. And I truly got a chuckle about the plating comment 😂 As a mom and now Grandma, I agree that yummy and nutritious food that you can serve affordably to your family is what it’s all about! I’m sending you a ketchup recipe to try. You can either use fresh tomatoes or just use tomato sauce. This ACTUALLY tastes like ketchup. I found this on a UA-cam channel from a large family in Canada, though I don’t recall the channel. From one Buckeye to another I hope you enjoy it. “Heinz” ketchup Remove stems and skins Make puree Simmer stirring periodically Cook down to desired consistency and blend again. Per quart of tomato sauce: 2 tsp salt 1 tsp garlic powder 1 tsp onion powder ¾ cup cane sugar ¾ cup apple cider vinegar Mix into tomato sauce and simmer until gets to your consistency To can: Water bath for 15 minutes for pints/half pints

Our lives couldn’t be more different - my husband and I are recently empty nesters so we have way fewer mouths to feed - but I find so much inspiration from your channel! Your voice is so calm and soothing and you motivate me to clean up our diets and cook more from scratch. I don’t know how you do it all - you certainly have your hands full - but I can appreciate how hard you work and how much you do for your family. That’s one of the things I love about UA-cam - is getting a peek into the lives of so many different people - many of whom we would never have the chance to meet in our regular lives! I watch your videos because I’m so completely impressed with your constant food preservation along with 3 cooked meals per day and homeschooling. So I sure hope you never let other make you feel bad. You are a momma hero in my book. I’m 61 and have a 6 acre farm that I’m doing 95% alone. I’m still working on infrastructure, but I do have chickens and turkeys. I keep my 5 year old grandson, and I promise I couldn’t keep up with you and I’ll bet the commenter doesn’t do one tenth in a day that you do. You are a precious soul! The food looks fabulous. I would be honored to eat those meals. The nutrition in the meals is great, the variety is wonderful and that you're cooking for so many mouths, 3 meals a day, within a budget, using what you have is amazing and inspiring to me. I wish I had done meals like what you're doing from the time my kids (now grown with their own families) were little. So much food waste and expense and frustration could have been saved over the years and I, my kids and family would have been healthier. I'm so thankful you're sharing this info. I feel like a lot of people think all this homeasteading and home schooling is weird. But it just looks so wholesome! I mean.. Kids today, even big kids can barely do anything by them selves (even use knife and fork because all they eat is junk food) and you are teaching valuable skills. I would have loved to grow up like this.

This is my first pantry challenge with you. Total for January is 136.00 for two people for 30 days. Using my pantry and added minimal groceries from the store. Will continue February and March with you and hope to do much lower than 136.00. Wish me luck.

I did well this month. I did break my self imposed rules for a couple things. 1. I had a local butcher running a great sale on beef roasts so I couldn't pass up buying a good chunk...but I canned it all for later. (Had to eat 1 pint that didn't seal) I also discovered that my yeast was not good so had to buy some new bulk yeast. Cheaper than buying bread items every week. But over all we did really well...might see how far I can go in Feb. Too

I adjusted the challenge for my needs - I don’t have a canned goods storage (once my canners get here, I plan on starting this year) for the challenge, I’m going through all my cabinets to see what needs eaten up - almost done. Once my pressure canner comes around March I’ll try to get portioned out ready to go meals canned. Right now I’m portion testing - I’m freezing the food until then. I got my first load done today. 8 soups and 3 cheeseburger „casseroles“. So exited

We have a Country Living mill that we just love! We were fortunate enough to meet and spend time with the creator of the mill many years ago. Jack was an amazing man, a believer in Christ, and just an all around great guy. The mill is hand-powered, but you can also get a motor. I have the motor because of the volume of flour we make. If the power goes out, we can still make flour. Win-win!
My dad always said “it’ll come out looking a lot worse” if any of us kids complained about mums cooking, presentation etc. I’m glad you’re strong enough to say it doesn’t matter to you. People need to walk in your shoes a while before making judgement and I mean that to apply to myself as well. I love what you do. I'm from Preston County, WV, where we have the Buckwheat Festival every year. We have buckwheat cakes more often around here than pancakes, and I definitely prefer them! It was always nice to come in from feeding the animals and eat a few hot buckwheat cakes before school in the mornings growing up.

Beef heart is on of my favorite parts of the cow and it has been since I was a kid. If there are any leftovers, I love to make a beef noodle soup with celery, carrots, onions, leftover meat, and egg noodles.
Split pea soup is wonderful! Credit to you for cooking from scratch for your entire family, many meals per day! Presentation is not a priority in everyday life, especially when you have young, hungry children!! You are an inspiration 🙏

Wow!, 14? You ladies are rockstars! Have you ever tried beef tongue tacos? If your crew likes onion and cilantro, lengua tacos are wonderful! That might be a way to sneak in tongue to more of your crew.

I love these video's. This is how my family ate when I grew up. In turn I feed my family of 7 this way because we were poor and this was cheap and comfort meals. Any time you can cook with basic ingredients and from scratch it saves money and is better quality food for your body. Thank you so much for your time and energy making these videos.
It has been several times that you have menschen about comments of presentations. You are serving young children that need visual simplicity not the one in a fancy restaurant. The identification of what in front of you is better than the guessing game of fancy presentations. I see the happiness on your children faces when they eat and that's what counts. We make our swiss steak on the stove with mushrooms and broth. We lightly flour / arrow root the steaks then add broth and mushrooms to the large cast iron skillet. Mom has always moved everything to a large pot and simmered it for 4 hours on the stove top. It is my favorite so, she makes it for my birthday every year...she is 80 and I am 54! This year, I made it for her on her birthday;) It's quick preparation and easy slow cooking---I put it in a crockpot and it was still very good. Mom agreed and she is a tough Pennsylvania Dutch woman from a 400 acre dairy farm...the middle of 7 children.

Your plates look just fine to me! You are feeding meals that are more nutritious to seven children, than most feed to a single child. And that is working around a ton of dietary obstacles. I really am working on simplifying my pantry. I probably have every kind of flour imaginable, many I no longer use. I keep most of the specialty flours in a freezer. I admire that you put 3 from scratch meals a day on the table for all your children. I was starved most of my childhood. This would have been heaven for me.

I can't believe there are people out there who come here to criticize you, your meals, or whatever other nonsense they feel like spewing forth that day. They should get over themselves or leave. I know I speak for many people when I say I very much enjoy what you do here, I appreciate that you share your family with us and even if you make a meal that's not my cup of tea...well that's just life isn't it? If we were all the same, liked the same things and talked about the same topics and agreed about everything life would be pretty boring. I mean come on!!! Someone doesn't like your food presentation! What the heck is wrong with that person?

While I’m not a homesteader, I do buy in bulk when items are on sale or in season. I really enjoy seeing how you utilize your “found” pantry and freezer items and am often inspired. And I truly got a chuckle about the plating comment 😂 As a mom and now Grandma, I agree that yummy and nutritious food that you can serve affordably to your family is what it’s all about! I’m sending you a ketchup recipe to try. You can either use fresh tomatoes or just use tomato sauce. This ACTUALLY tastes like ketchup. I found this on a UA-cam channel from a large family in Canada, though I don’t recall the channel. From one Buckeye to another I hope you enjoy it.
“Heinz” ketchup
Remove stems and skins
Make puree
Simmer stirring periodically
Cook down to desired consistency and blend again.
Per quart of tomato sauce:
2 tsp salt
1 tsp garlic powder
1 tsp onion powder
¾ cup cane sugar
¾ cup apple cider vinegar
Mix into tomato sauce and simmer until gets to your consistency
To can:
Water bath for 15 minutes for pints/half pints

Our lives couldn’t be more different - my husband and I are recently empty nesters so we have way fewer mouths to feed - but I find so much inspiration from your channel! Your voice is so calm and soothing and you motivate me to clean up our diets and cook more from scratch. I don’t know how you do it all - you certainly have your hands full - but I can appreciate how hard you work and how much you do for your family. That’s one of the things I love about UA-cam - is getting a peek into the lives of so many different people - many of whom we would never have the chance to meet in our regular lives! I watch your videos because I’m so completely impressed with your constant food preservation along with 3 cooked meals per day and homeschooling. So I sure hope you never let other make you feel bad. You are a momma hero in my book. I’m 61 and have a 6 acre farm that I’m doing 95% alone. I’m still working on infrastructure, but I do have chickens and turkeys. I keep my 5 year old grandson, and I promise I couldn’t keep up with you and I’ll bet the commenter doesn’t do one tenth in a day that you do. You are a precious soul! The nutrition in the meals is great, the variety is wonderful and that you're cooking for so many mouths, 3 meals a day, within a budget, using what you have is amazing and inspiring to me. I wish I had done meals like what you're doing from the time my kids (now grown with their own families) were little. OMG, I can't believe som eone said your meals lack presentation! What lucky kids to have a mother who cooks from scratch and feeds them so well.
I feel like a lot of people think all this homeasteading and home schooling is weird. But it just looks so wholesome! I mean.. Kids today, even big kids can barely do anything by them selves (even use knife and fork because all they eat is junk food) and you are teaching valuable skills. I would have loved to grow up like this.

This is my first pantry challenge with you. Total for January is 136.00 for two people for 30 days. Using my pantry and added minimal groceries from the store. Will continue February and March with you and hope to do much lower than 136.00. Wish me luck.

I did well this month. I did break my self imposed rules for a couple things. 1. I had a local butcher running a great sale on beef roasts so I couldn't pass up buying a good chunk...but I canned it all for later. (Had to eat 1 pint that didn't seal) I also discovered that my yeast was not good so had to buy some new bulk yeast. Cheaper than buying bread items every week. But over all we did really well...might see how far I can go in Feb. Too
People should not worry about presentation! If its good for you and tastes good, that's all that matters!

I adjusted the challenge for my needs - I don’t have a canned goods storage (once my canners get here, I plan on starting this year) for the challenge, I’m going through all my cabinets to see what needs eaten up - almost done.
Once my pressure canner comes around March I’ll try to get portioned out ready to go meals canned. Right now I’m portion testing - I’m freezing the food until then. I got my first load done today. 8 soups and 3 cheeseburger „casseroles“. So exited

We have a Country Living mill that we just love! We were fortunate enough to meet and spend time with the creator of the mill many years ago. Jack was an amazing man, a believer in Christ, and just an all around great guy. The mill is hand-powered, but you can also get a motor. I have the motor because of the volume of flour we make. If the power goes out, we can still make flour. Win-win!

I'm from Preston County, WV, where we have the Buckwheat Festival every year. We have buckwheat cakes more often around here than pancakes, and I definitely prefer them! It was always nice to come in from feeding the animals and eat a few hot buckwheat cakes before school in the mornings growing up.

Beef heart is on of my favorite parts of the cow and it has been since I was a kid. If there are any leftovers, I love to make a beef noodle soup with celery, carrots, onions, leftover meat, and egg noodles.

Glad someone else out there cooks like us. Homestead momma to 14. We love to saute heart with onions and peppers. Everyone here likes it. Now liver only about 1/2 will eat it. Tounge most will eat.
Wow!, 14? You ladies are rockstars! Have you ever tried beef tongue tacos? If your crew likes onion and cilantro, lengua tacos are wonderful! That might be a way to sneak in tongue to more of your crew.

I love these video's. This is how my family ate when I grew up. In turn I feed my family of 7 this way because we were poor and this was cheap and comfort meals. Any time you can cook with basic ingredients and from scratch it saves money and is better quality food for your body. Thank you so much for your time and energy making these videos.

It has been several times that you have menschen about comments of presentations. You are serving young children that need visual simplicity not the one in a fancy restaurant. The identification of what in front of you is better than the guessing game of fancy presentations. I see the happiness on your children faces when they eat and that's what counts. We make our swiss steak on the stove with mushrooms and broth. We lightly flour / arrow root the steaks then add broth and mushrooms to the large cast iron skillet. Mom has always moved everything to a large pot and simmered it for 4 hours on the stove top. It is my favorite so, she makes it for my birthday every year...she is 80 and I am 54! This year, I made it for her on her birthday;) It's quick preparation and easy slow cooking---I put it in a crockpot and it was still very good. Mom agreed and she is a tough Pennsylvania Dutch woman from a 400 acre dairy farm...the middle of 7 children.
This is great, this is what food is supposed to look like. It looks perfect, and the portions look perfect, not too much just enough. keep up the great work! These kids are lucky to have you guys.
Jessica, you are a much nicer person than I! (I know I should leave it at that, but I just can't.). What do they want you to do, garnish a toddler's plate with a sprig of mint or something? Your plates look just fine to me! You are feeding meals that are more nutritious to seven children, than most feed to a single child. And that is working around a ton of dietary obstacles. All I can say is that they must feel bad about themselves and need to try to bring you down because you are so amazing and they feel they fall short. Remember it is their problem, not yours.
The good old mystery container in the freezer to the rescue for lunch 😂. We all have those. Because when we put them away we figure we'll remember what it is, yet we rarely do.
And I'm not a fan of canned fish either unless it's tuna in water.
