हम भी पुलाव ऐसे ही बनाते हैं लेकिन आपने सभी मसाले लाइक लहसुन अदरक का पेस्ट हरी मिर्च प्याज गरम मसाले बहुत ही कम यूज किए हैं। आपका पुलाव कुछ फीका फीका रहता होगा i think .. मुरादाबाद में पुलाव के साथ शामी कबाब लहसुन पीली मिर्च की चटनी और दही रायते का रिवाज है लेकिन हम सिर्फ पुलाव ही इतना तीखा और मसालेदार बनाते हैं कि हमें उसके साथ कुछ भी ऐड नहीं करना होता।इसी रेसिपी में हम अदरक लहसुन प्याज गरम मसाले अच्छी क्वांटिटी में एड करते हैं लास्ट में जायफल जावित्री छोटी इलायची का पाउडर दम लगाते वक्त यूज करते हैं जिससे बहुत अच्छा फ्लेवर आता है।

MEIN KHUD MORADABAD KA HOON ...بریانی کئی سو سالوں سے تیار کی جارہی ہے۔ لیکن یہ 55-56 سال سے مارکیٹ میں فروخت ہونے لگا ہے۔ سب سے پہلے چوکی حسن خان (کہارون) میں منا بوارچی نے 2-3 کلو کی دیگچی بنائی اور اسے چار آنوں، آٹھ آنوں میں بیچنا شروع کیا، پھر بہت سے باورچی اس میدان میں آئے اور اپنی دکانیں کھول لیں جبکہ منا بوارچی فروخت کرتے تھے۔ ایک پلیٹ فارم پر بیٹھ کر کھانا، 50 سال پہلے مراد آباد میں کھانے کے صرف 2-3 ہوٹل ہوا کرتے تھے۔ لوگ گھر سے باہر کھانا برا سمجھتے تھے۔ ہوٹلوں میں صرف مسافر کھانا کھاتے تھے۔ اور آج بھی، باورچی صرف شادیوں میں ہی بہترین یخنی پلاؤ تیار کرتے ہیں۔ دکانوں پر اچھی بریانی نہیں ملتی۔

Though I belong to Lucknow and lived in Moradabad for almost 5 years but never experienced such flavours in 90's. Post 2000's, I have seen a marked change in Moradabadi cuisine and it has become really delectable. Your recipe is excellent, I'm really thankful to you. I made it today afternoon and it came out very well - succulent mutton with aromatic rice! True Puloa or Pilaf - as Turkish or Persians say! Thanks a ton!
