Whilst Jemma has been at home with her gorgeous baby Eden, Sally has been taking the reigns bringing you delicious and easy recipes every week. And this week she has Welsh Cakes for you! Do not be deceived by their rustic appearance. These pan cooked cakes are melt in the mouth delicious and incredibly more-ish. Serve them warm (you can toast them!) with a healthy spread of butter!

225g Self Raising Flour
Pinch of Salt
About 1/8 tsp Ground Cinnamon
100g Softened Unsalted Butter
20g Caster Sugar
30g Sultanas/Raisins/Currents - or a mix!
1 tbsp Whole Milk
1 Large Egg

My grandmothers welsh cakes were legendary. She used butter on the ‘plank’ and as they came off the heat (not quite cooked) she put them straight in a tin box with kitchen paper to soak up the condensation. They were perfect! She made them every week and if we were going on holiday or there was a wedding or funeral, she used to send a tin. I was in the Met police and when I came home, I used to take a tin back to London and everyone on my relief used to surround me at tea time. It’s taken me 50 years and I think I’ve cracked it! I can make my nana welsh cakes just like she did.

Being welsh, I make these all the time on my griddle as a snack, and me and my other half made them on our first date. 🥰
I will say, it’s almost necessary to have mixed spice in your welsh cakes rather than cinnamon, and you’ll get a much better result doing them on a griddle rather than in a frying pan, you’ll get better cooking marks. You can do them with all sorts of fillings too, I’ve found dark chocolate is nice, and at a Christmas - white chocolate and cranberry!
So glad welsh cakes are suddenly being re-discovered!

Can I ask actually, do you do yours with butter or lard?
@@amy3971 I do mine with butter. I don’t often come across lard! Also I use a teaspoon of honey instead of milk otherwise I find they go a bit claggy. Nothing worse than a welsh cake that sticks to the roof of your mouth!
@@AFunnyNameHere I do mine with butter too but I’ve seen recipes that call for lard and say it’s more traditional. I don’t know if that’s true, but I don’t fancy it. Glad to hear I’m not the only one. Good tip about the honey!
@@amy3971 I’ve been cooking welsh cakes for decades following my mam’s recipe...not written, more word of mouth. She always used a little lard mixed with mostly butter. That small amount of lard seems to help with the shortness of the welsh cake and it’s not noticeable in the taste. Another way to eat them is to split them along the natural line(a bit like scones) and smear a little jam inside. Yum yum.

My Nan made Welsh cakes on a griddle (or a girdle - they're also called girdle cakes) when I was a little girl. She used to put more currants in and nearly always managed to burn them a little 😄 Somehow, Welsh cakes don't taste right unless they've caught at the edges. I'm feeling nostalgic, now, for my grandparents and their Welsh voices, and a cwtch up 😊
I have to say, it made my morning, seeing Jemma's beautiful baby.
I miss Jemma baking, but can't never have too much of Sally, which is definitely the great thing happening during this pandemic. You're awesome! I'm really proud of being a fan for so long.
Also, whenever Sally is able to come to South America, Brazil can treat her super well with food!

Welsh cakes have a special place in my heart as they remind me of childhood holidays in wales 🥰 sometimes baking doesn’t have to be the most complex, decadent recipe but it just has to taste good !!

Oh my gosh, I LOVE Welsh Cakes. I first had them when I was visiting the Cardiff Central Market in Cardiff years back and they were the most delicious thing ever! I literally bought maybe 20 of them to carry back with me to London to share with friends 😂 So glad you guys are sharing this recipe! Can't wait to make these memorably wonderful cakes!

Perfect timing, my oven stopped working but the hob is fine. These will be yum to make!
What is better than warm Welsh cakes with coffee or tea on a cold day with a nice movie and the heating on😂😂
Mixed spice rather than cinnamon, and try adding just a handful of dessicated coconut to your mix. You don't really taste it but it keeps them really moist. As I have an induction hob, I cannot use my very old bakestone anymore, but use an electric frying pan, which works really well.
Here in Hong Kong people are crazy about rice cooker cakes because most of us live in tiny flats and can't afford the space for an oven. Unfortunately baking a cake in a rice cooker is extremely difficult as you can't really control the temperature. I'm difinitely sharing this recipe to those who want to make cakes without an oven. And maybe I'll try it myself, too.
oo it's nice to see someone from HK too!! and I can confirm that, but I've successfully made cakes in my rice cooker too, but I do agree it's a little tricky.
