    No Condensed Milk? No evaporated Milk?
    Yes. This is how Mishti Doi is made! Just yogurt and whole milk! You may also use Date jaggery powder instead of sugar - it is not refined/processed and hence better nutritious value

      @@pc3006 It's not my fault that you entered a footpath low-class roadside hotel. There are many tasty vegetarian Bengali dishes. But for that u have to go to standard restaurants, not footpath shops😂😂

      @@arunmaity461 actually you should not compare. Mishti Doi has its own taste that is unique. Ice cream is another different thing that has also a unique taste. You should not compare bhai. Tmi compare korle kto korbe!!! Prochur foods ache. Sob kichu sob kichur dik thk the best. Never compare.

      @@soumikpaulthebeast I am comparing both on the basis of occasions. For eg. Generally in Sraddho bari(sad occasion after some days when anyone dies) they don't give icecream..rather, they give Misti doi, but in Annaprasan(6/7 months after a child is born and learns to eat cooked rice)they give ice cream.. And in Marriage occassions they give either or both of them. I also agree that both are good.

      it looks pretty easy, thick curd can be got for cheap ready made, just make caramelized sugar syrup and add to it with boiled milk!

    You will never get the authentic taste of Misti Doi if you use normal curd to set the doi. Second the brown colour of Misti Doi in an authentic receipe come from burning the milk for more than 3-4 hours not by using this caramelise method. Yes you will get result but i can assume the taste very well , it will be more on the sour side.

    Stirring continuously while caramelizing sugar can sometimes ( not always) cause the sugar to recrystallize,, so it's better not to stir or stir only to avoid sticking to the bottom of the pan.

      That happens normally if you are using a regular pan, so using a non-stick pan is the best option.

    Very well explained recipe... I will surely be trying this one... My husband loves misti doi... I only have 1 confusion in the whole recipe:- u reduced the milk from 4 cups to 3 cups and then showed how to make caramelized sugar, in that caramelized sugar when u added 1 cup hot milk, was it from the earlier 3 cups of milk u had boiled or is it separate/different 1 cup hot milk..?

    When it is left for fermentation it does not turned into sweet yoghurt or meetha dahi. Why??

    Is it necessary to keep the curd mixture in the the clay pot. Can't we keep in any other container like Steel bowl or any other big bowl

      Yes you can keep, but clay pot will absorb the moisture so that excess water will be removed from the curd by the clay pot leaving you a thick curd
