Generally in Sraddho bari(sad occasion after some days when anyone dies) they don't give icecream..rather, they give Misti doi, but in Annaprasan(6/7 months after a child is born and learns to eat cooked rice)they give ice cream.. And in Marriage occassions they give either or both of them. I also agree that both are good.

You will never get the authentic taste of Misti Doi if you use normal curd to set the doi. Second the brown colour of Misti Doi in an authentic receipe come from burning the milk for more than 3-4 hours not by using this caramelise method. Very well explained recipe... I will surely be trying this one... My husband loves misti doi... I only have 1 confusion in the whole recipe:- u reduced the milk from 4 cups to 3 cups and then showed how to make caramelized sugar, in that caramelized sugar when u added 1 cup hot milk, was it from the earlier 3 cups of milk u had boiled or is it separate/different 1 cup hot milk..?

That happens normally if you are using a regular pan, so using a non-stick pan is the best option.

When it is left for fermentation it does not turned into sweet yoghurt or meetha dahi. Why??
Is it necessary to keep the curd mixture in the the clay pot. Can't we keep in any other container like Steel bowl or any other big bowl
Yes you can keep, but clay pot will absorb the moisture so that excess water will be removed from the curd by the clay pot leaving you a thick curd
