Small Batch BIAB: The Sous Vide Way

- A very economical way to brew all-grain beer for those with small spaces and/or small budgets, the small batch Brew in a Bag (BIAB) method of brewing is a great solution. Using the 'Avalon Bay SVS-100 Sous Vide Precision Cooker' (or similar sous vide device) to control your mash temperature, you bypass the need for additional bulky equipment (a mash tun and related burner) that you'd otherwise need for all-grain brewing.
Equipment Used (for 2 gallon batch):
18 quart pot
Stove top burner
Avalon Bay SVS-100 sous vide stick ( See link below)
Nylon mesh bag
Colander
Large metal spoon
3 gallon glass carboy
Funnel with mesh screen
#7 rubber stopper with airlock
2 gal keg (if kegging) or bottles

I have been doing kit brews and have been looking into doing whole grain. I also have been cooking sous vide. Never thought of putting the two together. Excellent.

Great video. I've been using my sous vide immersion circulator to heat my strike water and sparge water in my HLT for my last few batches.
Neat gadget. I could see this being useful for the beginning hobbyist on a budget to discover if they could even make a palatable beer, or just to have in the kitchen arsenal. Your videos are great Bud. I watch all the time from older ones to the freshest. You inspired me to jump in feet first Larry. I did my first all grain last Friday. Dingmans pale ale malt with Safale 04. 60 minute boil with 1/2 oz.cascade @ 60 minutes- 1/2 oz. Hersbrucker @ 30 min.- 1/2 oz. cascade @ 10 min. I would have never pulled the trigger had I not stumbled on your vids brother. Cheers!

Thanks for the video! I decided to get a sous vide stick since I'll be sticking with small batches for a while and keeping the temperature manually on the stove was a pain in the back side during my first batch haha

Looks like a fun brew day! I used to do the same thing with my funnel. Now n days, I have no problem just throwing all the trub in the primary. I almost feel like the hops are being wasted if they aren't marinating in the beer throughout fermentation lol I will definitely remove trub if I am using more than 2-3 ozs of hops per 5 gals

Larry another great video... I think this appeals to folks that want to try all grain but don't want to commit to an investment of $1k + to get started. It's nice to see a pro like yourself confirm you don't need a large $ investment to enjoy some good beer.
Larry great video. I have a GF30 but only used one last year due to lack of time. Will keep it but as I have a SV will give this a go. Mine is off a higher power so water should heat up quicker.

This is really funny, because I am currently entering the homebrew scene from a Mead making background, and after a bunch of research, I thought to myself "why do I need a sparge water heater when I can just stick my Sous Vide(Joule) in a pot of water!
Well if you start with hot water from the tap it might go a good bit quicker. Another thing that might speed it up would be covering the top of the pot with plastic wrap!

Typically BIAB is a no sparge process. Still, great video. Your stuff is just about my favorite on the internet. PS. Your zombie dust recipe was freaking amazing.
Maybe you could make a device that allows you to move the heater up an down, to accommodate different water levels?
Another great video that gave me some ideas. Why didn't you use your hops spider though?
I was on a sous vide kick for a while. One thing I would do is put my stove burner on high to ramp up quickly, then turn the burner on low for a small assist for the sous vide stick. Worked great for larger volumes of water.

Nice Video Larry. I have been using a Sous Vide for 6 months or so & I wondered how well it could be used for brewing. I was originally think of a full 5 gallons extract recipe with specialty grains. Never thought about a small batch brew using the BIAB technique. My concern is the size of the brew pot and whether my Sous Vide stick is long enough based on the amount of strike water. I’ll do some calc’s. Thanks again.
Can you please post the video where you pour and taste this beer you made. I really want to know how delicious it came out to be and the appearance in the glass.
My issue with small batches is...they're small. I hate running out of beer. And I've been brewing for two years and never done the same recipe twice (though I've done some saisons and brown ales that were awfully close). If I'm going to spend my day brewing, I want to get a full sized batch out of it.

I wonder if this machine could keep the temperature on a bigger batch like a 5 gal.
If I could give advise, I would suggest that you use a hop bag (small mesh bag) when boiling. So much easier than getting filters clogged up. Cheers and thanks for the video!
Great video! I've been meaning to do this for awhile since I've bought a couple of immersion circulators. Although I was planning on finding a larger vessel to put the brew pot into with the immersion circulator in the outer pot (double broiler style) to heat and hold my mash temp. I don't know how many batches you've done this way so far, but have you had any problems having the immersion circulator directly in the mash pot circulating the converted sugars?
I've actually been using my wife's sous vide machine to do step mashing using it, a smaller pot at elevation, with the mash being pumped up to it and gravity fed back to the mash.
BEER-N-BBQ by Larry I figured I'd give it a shot since we had it. Once you get the flow dialed in, it actually works surprisingly well.

Sir,
I have a query regarding the copper immersion chiller. I have seen a lot of videos and noticed that the luster of the immersion chiller increases (as compared to the time when you put it in the boiling wort for sterilization)when it is taken out of the wort after chilling which indicates that there was some layer of copper oxide or something on the copper tubing. Doesn't it make the taste of beer a little odd?? Hope you got my query.

Keep up the videos they help out a lot for new brewers like me. Just brewed my second batch of beer American red ale (brewers best kit 1gal) but did not see the yeast requirements on the top corner of the instructions and add the hole pack like 11g instead of the 1 teaspoon so I'm wondering how its going to turn out. Brewed it on the 3rd it really slowed down fermenting know I wonder if I should bottle it earlier since it fermented so fast of run the regular course?
BEER-N-BBQ by Larry Thanks for the fast response This is my last 1gal pain in the ass for a gal moving up to 5gal and no more racking cane that think sucks my new kettle has temp gauge with valve wort chiller fermonster with valve (I see how that think works) bottling bucket with valve so no racking I think my next brew will be cream ale I live down on the bottom of Texas very hot here in summer maybe a got beer for summertime! For the most part those Sous Vide sticks are sitting in water to work. In this case you have it in wort. Do you have to go through a more in depth cleaning do be sure you don't have any residual beer on the impeller, element etc?

Great video as always. I have a "small batch" question; if I want to only produce say 3 gallons, do I make the 5 gallons, ferment it and figure out what to do with the 2 gallons I don't really have space for to lager (I want to keg 3, I could bottle 2 if need be though) or should I shoot for 3 gallons and scale everything down. I just feel like there is much more room for error when you scale everything down with yeast etc. Have you ever ran into this?
Great stuff, Larry. For smaller batches than even this one, can you still rack to a 5 gal corny keg or is there too much headspace? If I'm going to regularly do small batches with my sous vide stick (I have an Anova), is it worth it to invest in a smaller keg? Cheers from a fellow Larry.
So let’s take this in another direction if you don’t have one of those sticks .. small batch on stove in large pot to prevent any over flows using a thermometer to monitor temp. Fill sink with ice next to stove for chiller.. . Filter into carboy Seems pretty easy way to make beer at home. Wish you would have finished the process in this video. All the way up to the finished beer and taste test.

I’m just curious. Before you transfer to fermenter, could you pour into a sanitized bucket with your BIAB strainer than lift out trube with the bag than pour into fermenter?

Do you need to set the strike temp at 163F if using the sous vide? I thought the higher strike temp was just to accommodate for temperature loss when adding cold grain to a tun? Since you're using a sous vide that you can accurately control and re-gain temperature quickly - do you think you could just set it at 153 (or 155 to account for some temp loss)?

What is your recommended size for a nylon bag for this system? Size and manufacturer would be great. awesome videos.
I just reuse the bag I use for straining my fermented wine grapes which fit a five gallon bucket. Is a little oversized for this 4 gallon pot but works fine. I could have gone smaller and tied up a floating bag instead. You can make a variety of sizes work. It just depends on your grain bill and pot size.
I appreciate these calculations 10:01! I would not mind seeing more here and there in future videos. It kinda separates your channel from other brewing channels.
What is your favorite most brewed beer?
I noticed you didn't make a yeast starter. Do you feel it wasn't necessary with the dry yeast? I have heard other brewers say that liquid yeast adds more flavor to the finished beer. What are your thoughts? Controlling the mash temps, for me, has been a problem in the past. Something like this could be the answer.

I have been thinking about it myself, but doesn't the sugar in wort go inside the stick and damage the heater?
Hasn’t yet. The heat is only mashing temperature. Stainless steel coils are fine.
I heard this could break your immersion circulator, you have any issues?
No issues here. I’m not sure what would break. It’s a stainless steel heating element and propeller pushing wort around just like water.
There are lots of people brewing this way. There are a number of sous vide brewing forums and Facebook groups out there. You can look there for feedback on your concerns.

I did a Big BIAB (9Gal) in 15G kettle using 21.5 lbs of grain. Used 10G of RO water and it fit. Put lid on and Lost 9 Deg in 60 min mash. Will Sous Vide stick hold my mash temp.???? Super excited for your input

Possibly. You might need a large sous vide stick for a batch that size.

Basically, any brewing video I’ve done since late 2017 uses a BIAB type system; Grainfather, Spike Solo, my sous vide stick, and to a degree, the BrewEasy.
I bought a Grainfather,. Now I'm debating whether to use the countrrflow wort chiller it came with or stick to my immersion chiller. I'm afraid of bacteria build up in counterflow wort chiller.
Just set your sous vide down in a stainless flatware drain/holder then you don't need to worry about it sucking up or blocking the water flow
