  • Today, thanks to Hadrian who shared his recipe with us, we will see how to use carrots to make wine at home.
    For this recipe you will need:
    Carrots 1 kg
    Sugar 1 kg
    Raisins 250 g
    Lemon 1
    Water 4.5 litres

    I am drinking my first glass of carrot wine following your excellent recipe. It is amazing. My old recipe is now in the trash (where it belongs). This version is light and fruity. It smells lovely and tastes even better. No hint of carrot flavour or smell. This is my 'go to' recipe for carrot wine from now on. Thank you so much for sharing this with us.     I'm almost ready to rack my latest 25 litre batch of carrot wine, although my recipe is a bit more complicated than this, probably unnecessarily so. I'll try this recipe now and do 5 litres. If it's as good as you say, and I'm sure it is, I'll make more. By the way, if you take away 20% of the carrots and replace them with parsnips, it makes a slightly sweeter wine.

      @@TheRpj for sure, we have the classic brazilian recipe called, feijoada. We have to pão de queijo, coxinha. But feijoada its so Classic. With black beans and pork Meat.

    Great recipe. Planning to make some wine this weekend.
    Out of curiosity, how did you make the fermenter using the water bottle? The tap will have a screw which will be difficult to close properly from the inside.

    I can’t wait to try this! I’m live in Hawaii and grapes are so expensive so it’s great that raisins are an option. I also need to check out your passion fruit wine recipe… I grow many passion fruits. 👏🏼

      The raisins are used to replace yeast nutrient powder. Although they do add some flavor, it's main purpose it to feed the yeast. The lemon is used to replace acidic blend powder. And if tannins were required, you would brew a stiff cup of black tea to replace tannin powder. Food grade sanitizer can be replaced by water+vinegar to keep everything clean and healthy. Simply wait for the fermentation process to end rather than using Campden tablets also... All modern chemicals that are normally used in modern wine making can be replaced with natural ingedients. Happy brewing !

    Again superb wine recipe🎉. Plz note 1082-992=90/7.5=12 but in u r video have numbers mistake
    90 instead of 30 plz correct it.

    Your fermenters are the perfect size. When I search for them I can only fint those really big 30L fermenters. Have you made yours yourself?

    I always wash fresh produce with a llight vinegar solution to get rid of pestices and preservatives. If you do that you could perhaps try your raisin yeast again.

      @@Spectacular-cuoredicioccolato Agreed but after the wash you need to rinse them properly to get rid of the vinegar residue especially if you are going to use orange or lemon zest.

    Olá Andréa, tudo bem?O vinho de cenoura que estou fazendo já está fermentando há 2 meses,é normal?Fiz como o seu vídeo,a única diferença é que a garrafa onde eu estou fermentando o vinho é de vidro cor ambar,e como eu não tenho airlock eu estou usando uma bexiga na boca da garrafa,desde já te agradeço, saudações de São Paulo, Brasil.

    another way to get a sweeter wine is to pasteurize the wine and then backsweeten to taste. it's more work than i'm interested in but it gives you more control over both the sweetness and the abv

    I tried making kamias and passion fruit wine all grown in our farm with jaggery (unrefined sugar) and bio-yeast..it's almost 4 weeks now..when is the right time to bottle... should this be refrigerated??

    What about raw carrot wine ? I know it is ok to start a carrot bug like ginger bug. There IS yeast inside

      that's probably better because that way you introduce natural enzymes that decompose the carrot and you'll end up with greater taste. but i am not sure the yeast can survive long enough in the alcohol.

    I keep the airlock off , for the first few days...as apparently oxygen helps fermenting ..so I just bang some cotton wool into top. Then I bang on airlock .

      @@Spectacular-cuoredicioccolato I dont think leaving the lock off is a good idea, and its not going to really supply much Oxygen that way. The best way Ive seen brewers get good oxygen into the mix, is to only partially fill the bottle (less water/juice)... then use a rubber stopper on top.. and shake the heck out of it for a few minutes, until its fully mixed. Then finish adding the rest of the stuff. This violent shaking, forces the air into the mix, and makes tons of visible air bubbles. The fermentation time should be vastly reduced.
      The channel on home brewing, that I watch often... is "City Steading Brews".
      I think some of their brews have been finished fermenting in less than 3 weeks. Depends on the type of brew.

      @@Spectacular-cuoredicioccolato The video was about an Italian chef in Italy trying to encourage people to eat more bugs. So they would freeze dry crickets grind them up to a powder and then make pasta out of it.

    You always use plastic bottles for fermentation but others say do not use plastic jars or bottles for wine fermentation why?

      It's the same for every homemade wine 🙄. You extract the juice from the fruit, or in this case vegetable . And Chuck the pulp. This is making wine 101 .

    1082 - 992 is equal to 90 not 30
    30 / 7.5 is 4 not 12
    You should not drink too much of the wines when making the video subtitles :D -🤣

    I really don't like this recipe. I would have grated the carrots and steeped it. Carrot had very little sweetness so this is mostly sugar fermented with raisins. Without the raisins it wont even ferment.
