Poppy Seed Roll is a traditional cake in Poland during Christmas. My aunt did it during the Christmas but even following my granny's recipe she failed terribly. I did it today with your recipe and it turned out amazing. The dough is so delicious and the feeling tastes like the one my granny made. I think that bread flour is a key factor to make this roll so delicious.
We acquired a bag of poppy seeds and decided to try your recipe for Christmas so it wouldn't go to waste. My parents loved it so much, that I am currently making it for the 4th time!! Thank you!

My Hungarian great-grandmother who came to St. Paul, MInnesota in the 1920s never learned to speak English but I understand she was famous in the neighborhood for her delicious poppy seed bread roll. I have a recommendation for rolling, which is to roll it out on cloth or wax paper. We make several rolls at once (although our dough is much denser and we roll it thinner and a lot wider - more spirals), so down goes the cloth, then flour, and then we use the cloth to roll it up - get the edge started and then gently lift the cloth to roll the dough over on itself. This is small by comparison, so I imagine wax or parchment paper would be enough.
My mother used to grind the poppy seeds before using them, because all the good stuff is on the inside. Does cooking them instead perform a similar function?

If you are still living in Germany and looking forward to make something with poppy seeds, you can get a moist ready to use mixture from "Schwartau" somewhere in the isle with all the baking goods in supermarkets. Coming to think of it, I've never seen dried poppy seeds. But then I might have not paid attention.
jmarylastone, Cooking the poppy seeds is an attempt to soften the poppy seeds and release some of the poppy seed flavor. If you really want to experience the poppy seed flavor, then they need to be ground in a poppy seed mill which is essentially a burr grinder. They are available on Amazon. There are several models available. The Jupiter mohnmühle (which in German means poppy seed mill) was originally manufactured in Germany. I don't know if currently sold Jupiter models are still made in Germany. If you adjust the poppy seed mill to its finest grind the poppy seed is macerated, the oils are released from the seed and the full flavor is manifested. It will look like a fine paste. The gritty texture of the poppy seed will be gone and you will experience the full enjoyment of the poppy seed filling as you might remember from your childhood. A second best option is using a coffee bean burr grinder, food processor or spice mill. You may have one already. Of course it will work in cakes and strudel (which is the German equivalent of this poppy seed roll).

Also the poppy seeds are often ground and cooked in milk rather than water. Also comes in the shape of buns or "fingers" (two smaller side by side rolls). Yours looks really well executed and ready for any festive event :) My favourite alternate filling is coca powder mixed with castor sugar, soaked in melted butter.
Anila, More traditionally the nut is walnut but I would not hesitate to use pecans instead. Use your discretion and pallet to decide which nut you want to use.

Did not like it. My friend Helena (from Poland) made these taste like a cake. This is like a bread. The texture is dry. The poppy seed portion kept falling off when I slice to eat...!
